I tried a recipe that wanted zucchini ribbons. I used a vegie peeler. it didn't work well. the ribbons were too thin and went to mush within seconds of warming up. Has anyone made z. ribbons for any recipe? what kind of tool? I don't have a mandolin. I have a spiralizer but it looks like it would be very short ribbons. the videos using the vegie peeler discard the middle of the zucchini. I
I have tried zucchini and sweet potato noodles and didn't like them so I'm not thrilled with buying another gadget.

I have a spiralizer and I have also made a pasta dish where I make zucchini ribbons using a vegetable peeler. First off, the spiralizer does make very long vegetable noodles....at least mine does, I often have to cut mine because they are so long, they become hard to eat. Second, zucchini is such a watery vegetable that unless you want a plate of mushy vegetable noodles, I find that you have to cook them VERY briefly. Sometimes, I quickly blanch or saute, then drain off any liquid that seeps out of the zucchini before adding it to the rest of whatever dish I am making. I think zucchini ribbons, however, would end up more "mushy" than spiralized noodles since they are thinner. The only way that I think you could get them not to turn to mush is if you had a peeler that was adjustable or else use a mandoline and make thicker slices. You might not get a "noodle effect" doing it with a mandoline but you might get a nice (albeit different) dish still. I don't use my spiralizer often, but when I do use it, I enjoy it. Vegetable noodles don't replace pasta for me at all, but I do like them for what they are....a vegetable prepared in a fun and different way to eat. But at the end of the day, I like my carbs and I am keeping my pasta....I'll just use whole wheat!!!

thanks for your ideas. I've seen videos of zucchini ribbons being made. I have a few vegie peelers... it did not work well. uneven, and too thin. I will see what I can get with the spiralizer. I dropped them into the other already hot ingredients but the ribbons were mush instantly. too thin. I liked the flavors in the recipe so will try again. an EW recipe they were paired with gnocchi. I also will keep my pasta.

I don't cook my zucchini ribbons. I toss them with other warm ingredients or use them in salads. I like the look of ribbons, but have much better luck making them using my Inspiralizer or julienne peeler. I always cut up spiralized things. The super long noodles are too hard to eat.
