Amidst all of the hubbub surrounding the big snowstorm we're expecting (1-2 feet!), I almost forgot that tomorrow is Pi Day! I'm thinking of making a chicken pot pie--I don't think I've ever made one before, and I'll certainly have enough time on my hands assuming we don't lose power. Is anyone else celebrating Pi Day out there?

My husband's coworkers planned a pi day celebration for tomorrow, but the pending snowstorm caused it to be rescheduled to Thursday. We are making CL's barbecued chicken pot pie for his contribution. I use strips of pie crust to make the lattice crust. We'll make it Wednesday night.
Depending on how tomorrow goes, I hope to have time to rifle through my pantry and make us some sort of mini pie on honor of pi day.

Today I am making chicken soup but I made two pies this weekend. Key Lime PieBlack Raspberry Buttermilk Pie (with this filling, but with 3 eggs, not 4)

Now that I know it's pie day, I'm thinking about it. I don't want to go to the store for ingredients, but I do have options at home. Hmm...

Of all things, I could really go for a peach pie today! I have to run to the store anyway because I'm pretty much out of flour, so I may see what I can find in the way of frozen peaches, as I'm sure the fresh ones will not be good.
