Anyone have good cooking plans this weekend? Mine aren't exciting, but I am thinking about making two pies. One I am committed to: Key Lime Pie. The other will happen if I have time. I was thinking of making a black raspberry custard pie. I have about a cup of frozen black raspberries from last summer in the freezer and saw a recipe where you just dusted them with sugar and put them in the bottom of the pie then poured in the filling and baked. Only, mine are frozen. Seems like it would still work. Maybe I should just make a black raspberry coffee cake instead! Toying with the idea of making Nigella's cod with broccolini (but with broccoli), but that will probably wait until next week. Also considering making a pot of chicken soup. I just have to see how the weekend develops and how I feel after my meetings tomorrow.

I'm harvesting the remaining garden lettuce tomorrow so I can start prepping the beds for tomato planting next week. I'll make a salad and Bucatini all’Amatriciana for dinner.
Sunday morning I'm thinking Jordan Marsh blueberry muffins and scrambled eggs with fresh dill. Maybe Mimosas too. Sunday night dh is doing bbq chicken. Sides will be roasted asparagus and either confetti corn or baked beans.

Easy peasy around here because of my meeting schedule. Tomorrow night is prosciutto-wrapped asparagus, smoked Gouda, sourdough bread and wine (after a ribbon cutting for our local splash pad). DH is cooking Sunday and opted for chicken Italian sausage with pasta and maybe a salad that he'll serve after my afternoon executive committee meeting. Life is full but really good. Last Sunday I found a wonderful international supermarket that just opened where I got pomegranate molasses, garlic paste and mango chutney for under $10!

I think some soup -- probably something with black beans. It is going to be super cold here tomorrow so a great day for some soup, perhaps one of these: CLs Smoky Black Bean and Vegetable Soup), Lemon Chicken Orzo soup or GIada's Lemon Chicken Soup with Spaghetti. Much depends on the ingredient list and what I have on hand.

I made a quinoa crust (Cook's Illustrated lady on dr. oz) pizza yesterday, will make corned beef hash of sorts with leftover corned beef and will be brining turkey hindquarters tomorrow for sunday.

The temperature here will be about 90 degrees or so. I have some things in the fridge and freezer and I picked up a few things at the market for another week or so of meals. Going to try some easy sheet pan dinners and mix and match the sides.
Sheet pan dinner of lemon garlic butter shrimp and asparagus.
Picked up a slab of barbecued ribs from the market to serve with baby bok choy and black forbidden rice with mango chunks.
Another sheet pan dinner with salmon and asparagus, green beans or bok choy, with any leftover black forbidden rice.
Hoping for some extra salmon to make cold salmon salads for the week.
There's also broccoli cauliflower and carrots, and couscous in case I need some quickie side ideas.
Edited to add I also have potstickers and some tempura battered shrimp in the freezer too.I should be good to go for a while.

calcook - that's CRAZY! It's below 0 here w. wind chill. Remind me why I live in MA?! Calcook, would love those sheet pan recipes...
Tomorrow we're having friends over so I'm making lasagna and Caesar salad from Small Victories (love this cookbook) and a pavlova for dessert. oh, and mushroom crostini from Sheet Pan Suppers for an app.

I love seeing what everyone is cooking. Soup and freezing and 90 and fresh veggies and planting! What a country Meeting was canceled--of course, I was left off the email notification so I drove half an hour there and then half an hour back and am now stewing! But it means I think I am going to make some soup after all. Gotta head to the store first though so I might make wedding soup instead of plain chicken--decisions, decisions. Charley, jealous of the garden-fresh produce. soupandstew, sounds like you found a great market. applecrisp, super cold here this coming week, too. Want to get in one more batch of soup myself. walleycat, how was the quinoa crust? calcook, do you have a sheet-pan cookbook or do you just wing it? Sallyt, what kind of pav? My mah jongg group loves them.

The quinoa crust was decent. It is carby but if you're not watching carbs and want to include grains other than wheat, it is pretty good.

Hi Sally and Erin. I have a few recipes I saved and bookmarked from the web for the​ sheet pan dinners. Will try to find them and post some links. If you Google shrimp and asparagus sheet pan and salmon and bok choy sheet pan, I think you'll find it on the web, if not ,something pretty close. I sort of use it as a guide and then wing it and use whatever I have around.

Apple sausages in the microwave, green grapes in the oven and polenta stove top. That was tonight's dinner in 30 minutes. Tomorrow chicken with mango chutney and a green salad. Hopefully enough for two days. Very little time to cook right now.

Just made Vegetarian Chili with Avocado Salsa (South beach diet recipe) that I got years back on the old CLBB with just a few tweaks. We are getting a snowstorm on Tuesday and I'm running a little low on a few things but I bet the supermarkets are a zoo so I'll make due. On Friday I made (more like roughly followed) one of my all time favorite CL recipes: Basil Roasted Vegetables Over Couscous/Cooking Light June 1996 www.myrecipes.com/recipe/basil-roasted-vegetables-over-couscousswedishcook, your meal sounds delicious. I don't think I've ever cooked with grapes before, sounds interesting.

I am guessing that you are in the path of the same snowstorm that is supposed to hit us here (CT) Monday night into Tuesday. We are in the 12-18" band with locally 24" bands! EEK! I am predicting that I will be hunkering down at home that day. I may get a bit more of a head start that day with some Passover cooking. Yesterday I made my chicken soup. Today I skimmed the fat from it and used the "schmaltz" to make the first batch of matzo balls. So Tuesday I may do another batch of matzo balls with the rest of the schmaltz and maybe some Passover cookies. That is really about all that I will/can do this far ahead and freeze.
I also made an Italian wedding soup and a spaghetti soup with Italian turkey sausage this weekend for my lunches and some for the freezer. Dinners this week will mainly be leftovers and from the freezer. I have to use up some of the meals that I have in there....some lasagna rollups, stuffed cabbage rolls etc...

the pavlova was delicious! so was the whole meal - the mushroom crostini from sheet pan suppers were delicious. Note that the mushrooms were REALLY roasted, so I'd just chop in 2 next time.

Glad to see that it was a good meal, Sallyt. Will file away that pav recipe. My pie experiment was a success, too. I used the filling from this Beekman buttermilk pie (which I have made before. The recipe in the cookbook says 3 eggs, not 4. The pecan crust did not work for me that first time.). Put mostly thawed berries in the bottom of a parbaked regular crust and then poured the filling over; left a little filling out, but I could have used it all. Still baked in an hour and the crust was cooked through and crisp, but didn't brown as much as it normally does. It was a little tart as I did not add anything to the berries, but still tasty.

Apple crisp,
Made lentil soup today on our (1st!!!) snow day. School has already been canceled for tomorrow which means I won't have work. My DD purposely stranded herself at a friends house last night so she was MIA. My DS#2 is home this week on his spring break from college and his girlfriend purposely got stranded here last night. She and DS#2 are outside now digging her car out and blowing the driveway with DH. She may try to head home tonight, I think. This morning I made them homemade baked donuts and matzo brei(scrambled matzo and eggs). I made a plain donut batter; then dipped some in butter/cinnamon-sugar; topped the others with either a "smores" topping (chocolate glaze/grahms/mini marshmallow) or cookies and cream (chocolate glaze/crushed oreos/mini marshmallow). Not my thing but the kids loved them (and DH!!). The only thing that will mess me up again tomorrow is my AM routine. I swim every morning at 5 AM. My pool was closed today so I slept later and exercised at home (elliptical). Tomorrow it is re-opening but not until 10 AM so my schedule is going to be all over the place! Oh well....need my chlorine addiction so I will make it work! Stay warm.
