I saw this recipe on budgebytes.com and it has some of my all time favorite ingredients/flavors. I love lime with those ingredients and the lime crema sounded interesting.... Copied. I haven't made the recipe, but I thought I would post anyway. Some of the ingredients include: sweet potatoes, lime, cumin, corn, bl beans, red pepper, onion, cilantro. Here's a pic from her site. This sounds great... I love all the flavors and it would be "lunch" except I didn't buy cilantro yesterday... so will wait a few days. or maybe I'll go ahead without, as DH doesn't like cilantro anyway. I will use either olive oil or coconut oil instead of plain vegetable oil. I think I saw canned or frozen corn that was 'charred" making it even easier. thanks for posting.

Traildoggie -- You're so welcome, I just thought it sounded so good. I've never tried it, but Trader Joes carries charred frozen corn. I do like their plain frozen corn (can't recall which of the plain ones I usually get). If you try the recpe, hope you enjoy and post a review if you would like. I'm with you, that recipe has some of my favorites.

I will make it for dinner instead... with maybe a piece of fish. guess I will char my own corn.
ETA I did make this but didn't like it as much as I thought I would. very colorful and certainly edible but not flavorful enough. maybe there's a trick I don't know to charring corn. mine just got browned and chewy making for unpleasant texture. I wouldn't do that again. I think it needed more flavor. if you try it, I'd be more generous with cumin and maybe add in some chili powder. I don't think the lime crema was enough flavor.

It does look good!! Recipe saved and tentatively planned for Thursday night... I have attached another sweet potato recipe for your use from Cookin Canuck. I really liked it and have made it a couple of times...
Sweet Potato & Apple Salad with Chipotle Lime Dressing
The salad: •2 pounds sweet potatoes, peeled and cut into 3/4-inch dice •1 large apple, such as Fuji, Gala, or Granny Smith, cut into 1/2-inch chunks •1/2 medium red bell pepper, chopped •1/2 green pepper, chopped •1 celery stalk, chopped •1/4 red onion, chopped •2 tablespoons chopped fresh cilantro
The dressing: •2 chipotle chilies en adobo (I only used 1) •1/4 cup lime juice •1 tablespoon honey or molasses •2 tablespoons tomato catsup •1 clove garlic, peeled •1/4 cup extra virgin olive oil

Must.Try.This. --- Emptynestmom, thanks so much for posting it sounds great! What do you usually have with it? It looks so good to me, I'm thinking just a fork. Love the combination of flavors! If you try it, would love a review if not too much trouble.

Apple crisp I can't remember what we had with it, but imagine it was chicken breast since we eat lots of chicken... personally I think it's good enough to stand alone🙂

empynestmom-- I made the Sweet Potato & Apple Salad with Chipotle Lime Dressing last night and it was great! I will definitely make it again, thanks so much for posting. I basically followed the recipe with just a few changes (nixed the celery ..).
I went with your recco, and since I had some leftover chicken on hand.....
Leftovers for lunch today.
