Incredibly juicy and flavorful, this low calorie chicken recipe is a real crowd pleaser. It’s very quick and easy to prepare, but packs a big punch on flavor. Makes a great weeknight Weight Watchers dinner recipe.
I made this last week and was very surprised at how good it was...and it made great leftovers for the next 2 days!!!
Ingredients
•2 lbs skinless, boneless chicken breasts, cut into 6 breasts •1/3 cup reduced sodium soy sauce •1/3 cup balsamic vinegar •1/4 cup honey •4 cloves garlic, minced •4 large shallots, thinly sliced •2 tbsp fresh rosemary •1 tsp black pepper

Here's one I enjoyed.
Chicken Puttanesca Sunset 8/10 2 tablespoons olive oil 4 boned, skinned chicken breast halves (about 1 1/2 lbs.) 1/2 teaspoon kosher salt 1/2 teaspoon pepper 1/4 teaspoon red chile flakes 1 tablespoon minced garlic 1 pt. cherry tomatoes, halved 1 tablespoon fresh oregano leaves 2/3 cup pitted kalamata olives 4 ounces fresh mozzarella cheese, sliced Heat oven to 450° with a rack set 5 in. from the heat source. Heat oil in a large ovenproof frying pan over high heat. Sprinkle chicken with salt and pepper. Brown chicken in hot oil on one side, about 4 minutes. Turn chicken over and add chile flakes, garlic, tomatoes, oregano, and olives. Transfer pan to oven and cook until chicken is cooked through, about 20 minutes. Lay cheese over chicken and bake just until melted and browned, 2 minutes.

The Chicken Puttanesca sounds delicious! I love everything in it...I'll be trying it sometime in the near future. I'll let you know what I think when I do! Thanks!

This is a favorite, Asian Lettuce Wrap Chicken Chopped Salad from Skinnytaste. Here's the recipe -- www.skinnytaste.com/asian-lettuce-wrap-chicken-chopped-salad/I made it again tonight and pretty much followed the recipe and used chicken breast (that I cut up in small pieces) instead of ground chicken. Chicken Cordon Bleu is another easy favorite, and versatile. You can prepare it on the stovetop or grill, use the cheese of choice (provolone, swiss, gruyere, mozzarella, brie), ham (or prosciutto), sauce it, or spread with dijon mustard. Top of chicken with the ham and cheese, or make a pocket and stuff with same. I sometimes season the chicken breasts w lemon pepper, brush with oil and grill on my indoor grill, spread w dijon mustard, and top with provolone, deli ham, or whatever I have on hand. Alternately, the chicken breasts could be wrapped with prosciutto. Thanks calcook for the Moo Goo Gai Pan recipe! That's a dish I've never prepare myself but now I know how to do it That's one of our favorites too! I substitute cannellini beans to accommodate DH. If I have the patience to marinate chicken for 24 hours, another favorite is Spicy Chicken Thighs with Apricots and Olives. Have also tried it with skinless, boneless chicken breasts, but that did not turn out as well.
