I've made this recipe a few times, usually in the warmer months, but I was in the mood for a light, citrusy side. And, since I needed to use up some limes and red peppers ... And the leftovers were great for lunches. Like so many recipes, can switch up ingredients/tweak. I used frozen corn since it will be a while before fresh corn is here! Looks great! Will have to remember this one and make it fairly soon thanks! If you try it, hope you enjoy. I never make it the same way so love how flexible it is --- sometimes sub all black beans etc. It is especially great with summer veggies, but hey not bad in winter too! And, I'm a huge fan for any salad with those vinaigrette flavors.

Applecrisp...I made this last night...tried it after it sat for about 45minutes - 1 hour. I liked it, I made it with frozen corn and followed the recipe pretty closely...although I didn't have the limes I thought I had and didn't want to go out to the store so made it with refrigerated keylime juice. I have the rest in for a potluck that we are having at work today...thanks for sharing the recipe, it is a keeper.

Bring on the fresh corn, just a few weeks, oh I mean months away. I love fresh corn but I'll admit I usually use frozen corn in salads since easier/quicker.
