I saw this recipe for a sweet potato and cashew dip on the Nom Nom Paleo website last week and was intrigued: nomnompaleo.com/post/156278901808/sweet-potato-and-cashew-dip-from-tess-masters. She served the dip with raw vegetables, which seems a good way to get veggies and more veggies into my diet.
For this recipe, I use all the ingredients in my kitchen routinely but have never put them together in quite this way. Wow! The dip looks so mild-mannered, but the flavors are dense--sweet, savory, sour, and well-spiced. I did sauté the spices first with the onions, as suggested in the comments section of her post, and I added a bit of cayenne to the spice mixture. I found the complexity of the flavors startling in a very good way. After years of cooking, it can be hard to be surprised by a recipe. This was a winner for me. I am looking forward to taking in my lunches this week.

I may have to try this. I have better than half of the largest sweet potato I've ever seen left over from another meal and happen to have raw cashews. Sounds really odd, but I like the flavors going into it. I can see a little cayenne, some pepper and/or a chili-garlic sauce being good with it (though you might need to cut back a bit on the vinegar to balance since chili sauces can be vinegary).
