No joke. This REALLY REALLY WORKS. Buy a bunch of fresh scallions (green onions). Pour maybe 2 inches of tap water into a glass. Cut the scallions an inch or two above the root hair thingies (use the green rest for something else) and place these little cuttings, root end down, in the glass of water. Place in a sunny spot, like on your windowsill. Within a week or so you can start snipping greens from the tops to put on your food. (The green parts start shooting up like magic.) OR you can take them outside and plant in planters or yard. I read this hint in a cooking magazine. They grew for me and I was so amazed. (But then my husband took them outside and put them in his garden and I never got back to them. I should start another batch and insist that he leave them BE on the windowsill so I can just snip off the greens as they grow because THEY DO...and it really only takes a week. It's quite thrilling.)

Yes, it works wonderfully. I had a whole windowsill full of them a few years ago when I was following a low FODMAP diet and scallion greens were the only onion family I could have.
