I'm not a huge cookbook collector - space etc., but The Good Cook collection from Time Life books is one of my favorites. The hardcover books are broken down by food catagory, and there about 28 books in total. The color photos are beautiful, IMO Particularly for the time/era. The techniques are in the front as I recall, and recipes in the back of the books.
Back when, you could buy one featured hardcovered book a week for about 99 cents at the market.
I have several I've collected over time. My favorite is the Pasta book.
If you have a chance, check them out at the library. I've been filling in my collection with copies I've found on eBay.
