I believe this one was from Sneezles. It's particularly good with Rancho Gordo Eye of the Goat beans, roasted Hatch chiles, and chicken thighs instead of chicken breasts
Crock Pot White Chicken Chili
1 lb navy beans, soaked 1 medium onion, chopped 3 cloves minced garlic 8 oz chopped green chiles 2 tsp ground cumin 1 tsp oregano 1 1/2 tsp cayenne pepper 1/2 tsp salt 2 lbs boneless skinless chicken breast halves 14 oz chicken broth 1 cup water
1. Put beans in medium pan and cover with water. Bring to a boil; reduce heat and allow to simmer 20 minutes. Discard water. Variation: To save time, you can subsitute the navy beans by buying canned white beans. Make sure to drain them.
2. Cut chicken into 1-inch pieces.
3. Put all ingredients in your slow cooker and mix thoroughly.
4. Cook on low 10-12 hours or high 5-6 hours.
