I just discovered that I never printed one of my favorite recipes from the old CL board, and I was hoping to make it tonight! Does anyone happen to have a recipe for stilton soup from the old board? I think it was posted by Sneezles. I know it had cider in it, and maybe cream? I hope someone has it. It is so good! Thanks!

Stilton Soup Posted by sneezles
Serves 2
1 oz butter 1 small onion, finely chopped 2 tbs all-purpose flour 1 cup chicken stock 1/2 cup dry cider (you can find this in a liquor store) 1/2 cup whole milk 1 tsp Dijon mustard 6 oz Stilton cheese (trimmed of rind and crumbled) salt, to taste ground white pepper, to taste
Melt butter in a heavy medium-sized saucepan. Add onion and sauté for 3 minutes over medium-low heat. Stir in the flour, mixing well and cook for 1 minute. Gradually stir in the chicken stock, cider and milk. Bring to a boil, stirring until thickened. Add the mustard, crumbled Stilton, salt and pepper to taste. Stir continuously until the cheese has melted and the soup is piping hot.

Thank you! I am so happy that I can make this tonight! And thanks for the other recipe CafeLatte. Would have tried that one if Sneezles recipe hadn't turned up.
