A classic from Linda in MO. Vary the sweetener, nuts, and dried fruits. Maple syrup, almonds or pecans or walnuts, blueberries or cranberries or whatever. Not too clumpy, not too high fat.
Down to Earth Granola
4 cups rolled oats 1 1/2 cups sliced almonds 1/2 cup packed light brown sugar 1/2 tsp salt 1/2 tsp cinnamon 1/4 cup canola oil 1/4 cup honey 1 tsp vanilla 1 1/2 cups raisins and/or dried cranberries
1. Preheat oven to 300 degrees.
2. In a large bowl mix the oats, almonds, brown sugar, salt and cinnamon.
3. In a small saucepan warm the oil and honey. (I did this in a glass measuring cup in the microwave). Carefully stir in the vanilla (be careful because it bubbles up).
4. Pour liquid over oat mixture. Stir gently with a wooden spoon; finish mixing by hand if needed.
5. Spread granola in a 15x10x1 inch baking pan (I greased it, next time will use parchment paper).
6. Bake 40 minutes stirring carefully every 10 minutes. (I would probably bake a few less minutes next time)
7. Cool on pan on a rack.
8. Stir in raisins or cranberries.
9. Store in airtight container. Will keep 1 week at room temp. or 3 months in freezer.

Thanks for posting the granola recipe -- just added it to my "breakfast" file on my computer.
Here's my usual go-to that I've made for years!
Crunchy Granola Recipe courtesy Kathleen Daelemans Show: Cooking Thin Episode: Newlywed Gain, Part 1
1 1/2 cup brown sugar 1/2 cup water 4 teaspoons pure vanilla extract 1 teaspoon salt 8 cups rolled oats 2 cup chopped pecans or walnuts, or slivered almonds
Preheat oven to 275 degrees F. Line 2 cookie sheets with parchment paper and reserve. Combine brown sugar and water in a 4-cup microwave proof glass measuring cup or bowl. Place in microwave on high for 5 minutes and cook until sugar is completely dissolved. Remove from microwave, add vanilla extract and salt.
In a large mixing bowl, combine oats, nuts, and brown sugar syrup mixture. Stir until thoroughly mixed. Spread the granola onto cookie sheets and bake 45 minutes to 1 hour or until golden and crunchy. (poster of this recipe said he stirs half way, never goes past 30 min)
When the mixture comes out of the oven, it is still very pliable. You may choose to add in dried fruit as a finishing touch at this time. When granola has cooled completely, store in an airtight container.

The recipe in the book only calls for 1 cup of brown sugar, all other ingredient quantities are the same. In a sidebar, it says, "Here's the skinny on this recipe: you can make it with 1 cup brown sugar and it won't be as clumpy or you can make it with up to 1 1/2 cups brown sugar and it will be clumpier. Manipulate the raw granola just before you put it in the oven by squeezing it together in your hands as you drop it onto the cookie sheets. The granola will clump together.

MY NOTES --- it makes a LARGE!! quantity so I always cut in 1/2, and watch when heating up the sugar so it doesn't overflow (how do I know that : ) ) Watch to see that not getting too brown. I don't like to use really small pieces of walnuts since can get too toasted. Often use less sugar.
