So I want to make Erin Elizabeth's Scalloped Potatoes and Ham - well, actually it's a Betty Crocker recipe but Erin E posted it for me . I went to the store and didn't find any ham that looked like something I wanted to buy so I was thinking of maybe substituting smoked salmon for the ham. Has anyone tried it? There are a few recipes out there so it's been done before but I didn't see a lot of reviews. I would still use the recipe Erin E. posted but just use the salmon instead of ham. Any thoughts?

My first instinct would be to serve smoked salmon separately - both for cold smoked and warm smoked. However, I do have a recipe where you layer cold smoked salmon with sliced potatoes, sautéed onion and fresh dill - then pour a milk & egg mixture over it all before baking in the oven at 400 degrees for about 45 minutes. It's very good but changes the texture of the cold smoked salmon. Other than that I have added both kinds of salmon to warm soup but at the very last minute. Canned salmon might do nicely but that's something I have only used in cold salads myself. Looking forward to see what others think

Thanks for the feedback. I think I would like it but I'm sure DH would prefer that I don't add ANYTHING to the Scalloped Potatoes - well, he might enjoy bacon but he's not a huge ham fan. I might check out another grocery store and see what they have. Even though DH isn't a big fan of ham, I have been craving the dish and since I do all the cooking...

You could always add a layer of halved sliced hot dogs, and throw some peas on top. Too trailer park trash? LOL

LOL LOL - I think they use to serve us that in grade school minus the peas and I remember actually liking it. I think I'm going to go ahead and make it with the salmon. Worst case scenario we just pick the salmon out OR make a frozen pizza if it's inedible which I can't imagine it would be. I'll report back. It's on the menu for Saturday night.

I know I am late to the party, but what if you just put the salmon on top of the casserole for the last 10 minutes or so of baking? The salmon scalloped potatoes I saw online had much shorted cooking times--like swedishcook said above, about 45 minutes. When you dish out a scoop of the potatoes, you could put the warmed salmon on top or mix in.

I'm going to check out another grocery store today and see if they have a better brand of ham than Safeway did. Where we used to live we had a great butcher shop where I used to buy all my meat so I'm spoiled.

Profound apologies!!! It suddenly dawned upon me - the dish I mentioned above uses BOILED potatoes. (Boiled w skin, slightly cooled, peeled & sliced.) My intention was not to deceive anyone. That bake time has to be enough for egg-milk mixture to set. Again, I am so sorry. Still, it's very good.
