When I was looking at the Eating Well website, one of the recipes had the words "roasted pears" and "brie" in the recipe title, I had to click on it. I made it a couple of days ago and I thought it very easy to make and only took a few ingredients, I thought really good and something different (I've only cooked/roasted pears once before). To get an idea of the recipe, the ingredients are: honey mustard, olive oil, lemon juice, s/p, pears (they suggest Bosc), brie, pistachios. (I subbed a different nut). Here's a link to the recipe. www.eatingwell.com/recipe/250382/roasted-pears-with-brie-pistachios/And a pic from their website.

That sounds interesting... what did you use it for? appetizer? or is it substantial enough for a lunch?

That sounds interesting... what did you use it for? appetizer? or is it substantial enough for a lunch? I wasn't sure when to eat it -- so I went with my go-to default, had along some roasted chicken. It says to serve as a first course or a side and some did comment that they used as an app (I can't remember if they cut up more). I thought it was good and certainly a change from just eating the pear plain as a snack. If you try, hope you enjoy.
