I might make it for Christmas Eve. I made clam chowder years ago but can't remember how we liked it or what recipe I used. I'm pretty sure I used canned clams but if I can find fresh, I'd like to use those. Anyone have a T&T recipe they could share? I found a few that all sound pretty good (some use bacon and others use salt pork) so thought I'd reach out to you guys on your fave/s. Growing up my mom always made oyster stew for Christmas Eve but I hated it so always had grilled peanut butter - yum!! ETA - LOL, I just did a search on the old CLBB archives for some ideas and it turns out I asked this same question last year on 12/22. I don't think I actually made a chowder for Christmas Eve but I don't recall what we had either. That said, recipes are still welcome .

This one is pretty close to what my dad made. His was the best ever. With this recipe, I use only 2 TBL of the flour and use whole milk instead of cream. I prefer a less thick, less rich clam chowder. I can get shucked clams at the grocery store (I request them ahead), I've never used canned clams. Emeril's Fall River Clam Chowder

I really like this CL Simple Clam Chowder- with some changes. I just made it this week, in fact, and I completely skipped the bacon. You know what? I didn't miss it. I also use whole milk instead of skim, and I also add 1 cup of heavy cream. Instead of using canned, chopped clams, I use canned whole baby clams. This is Wisconsin, so fresh clams are not happening. It makes a delicious chowder. I like to sprinkle some fresh parsley in right before serving.

Thanks, they both look great and I've bookmarked them. I found a can of clams in my cupboard so have decided to buy a couple more and keep it easy.
mrswaz - since you add cream do you decrease the amount of milk?

When I made it this week I used 3 cups of milk, and then remembered that I'd wanted to use up some heavy cream. I was going to reduce the milk, but I added the cup of cream on top of the milk and I didn't think the soup was too soupy because of it. It would have been more thick and hearty had I reduced the milk to 2 cups, and then added the cream, but it was good how it was. I think you can be pretty flexible with the dairy.
