Everyone seemed to like this side -- and it is good at room temp as well. Made a few changes based on what was on hand/preferences and cut back on the red pepper (sure the recipe had spicy in the name, but cut back, but not sure by how much). Same here. I have a butternut squash in the fridge to use up -- I might make Roasted Butternut Squash with Onions Spinach and Craisins -- basically just cutting up squash and onions and roasting, and tossing with a few other ingredients. And bonus that it will use up the last of the dried cranberries that I bought at Vitacost (not a fan of craisins and I find them way toooo sweet/don't really like). The only work is cutting the squash.
