We are going to be hosting a party soon and have decided to do a taco bar theme. Has anyone done one of these before? Any suggestions for toppings or any good recipes? Thanks!

I have done this for family gatherings and it is lots of fun plus everyone loves it. The possibilities are absolutely endless, too. Don't just stick to traditional toppings either. The only chore is that there is lots of chopping to prepare toppings and you have to organize a topping station with everything that you decide to put out so that things flow smoothly. I have done this with just one primary meat filling like a ground turkey filling and numerous toppings or depending on the crowd I will offer several "main" fillings like a meat, chicken, and seafood etc....filling with the toppings. Sometimes I add sides as well again depending on the crowd, how many people I am serving etc.... By sides, I mean things such as rice, cornbread or corn on cob, watermelon in summertime, a pot of beans etc.... As for the toppings themselves, of course, there are traditional things such as guacamole or avocado, cheese, sour cream, salsa, scallions but also consider things such as shredded carrots, diced red bell peppers, chopped tomatoes, jicama, tomatillo salsa, chopped broccoli and/or cauliflower, diced summer squash or zucchini, olives, radishes, red (or green) cabbage, mushrooms, corn nuts or pepitas or tortilla chips for crunch, feta cheese, cucumbers etc etc etc..... Often times people end up building a giant taco salad on their plate with their tortilla on the bottom but it is still fun, tasty, and pretty darn healthy as an added bonus. Have fun with it!

I did a taco bar for 30 and this recipe was a big hit. Served as the main filling for vegetarians and vegans and others ate it as a side. I really liked it and I am not a huge fan of lentils! It tasted like good refried beans.
Lentil Taco Filling 1 c chopped onion 1 garlic clove, minced 1 tsp oil 1 c dry lentils, rinsed 1 tbsp chili powder 2 tsp cumin 1 tsp oregano 14 oz veggie broth 1 cup salsa Combine all and cook on high 8-12 hours, stirring and adding water if needed. Mine took 3 hours on high and no extra water added.

Karen, that sounds amazing. I did a very small "bar" offering...just the typical stuff: shredded cheese, jalapenos, diced onions, avocado, olives, cilantro, and salsa. Erin, that recipe sounds so easy and good. DH is not a lentil fan, so I may try this.

Fish/Seafood Tacos Beer-battered cod, shrimp, crab, snapper, mahi mahi -- whatever you like. Creamy Cabbage slaw, shrimp Pico de Gallo, mango salsa, avocado, limes, cilantro. Ceviche. Asian Tacos filled with char Sui and cabbage, etc. Think food truck. I noticed Old El Paso carries Taco boats that can be filled/stuffed. Thinking it would make a cool vehicle for ice cream tacos with toppings of choice i.e. chocolate syrup, nuts Etc. Saw an interesting idea for middle eastern meets Mexican - Taco boats filled with falafel and salad fixin's.
Don't forget the margaritas

Taco/nacho bars are a lot of fun, but they can also get away from you and be a lot more work to both prep and serve than you are expecting -- all those little things add up. Pick a theme or direction and stick to it. Don't try to do all things for all people, but do include corn tortillas and beans (side, salsa - somewhere), for the GF and vegetarian options. A Spanish or cilantro rice and avocado also add substance for those choices. Even though tacos are finger food, have forks and plenty of napkins.

Thanks for all the great ideas! I'm hoping this won't be unexpectedly difficult. There were will be a lot of people (maybe 40-50), but we will only need to do the taco part. Everyone else will be bringing side dishes, desserts, appetizers etc.
I really want to do fish tacos, but I think that would be too much work. Therefore, does anyone have any good recipes for chicken or beef taco filling?

Beautiful, melted cheese covered dish of refried beans. The best I've found (I'm from So Cal most of my life and miss good beans) in canned refrieds is Bearitos brand. When we have Mexican food, I often make a pan of these. So, for a taco bar, some beans might be nice addition to the table. So pretty. They can even be used by some people as a taco filling.
If I have time, I might mix in some cream cheese (Philadelphia, of course)... (and sprinkle with some Penzey's Arizona Dreaming). Just spray a pan, spread in the beans, toss some shredded cheese on top...and bake for maybe half an hour at 350F. Looks great when it comes out of the oven.

For that large a crowd, "just the tacos" is still a very large undertaking. Not only do you have a lot of potential parts, you need a lot of them. But that does help. You might want to do some of the prep a day ahead -- the meat filling(s), shredding cheese, etc. Will you have beans and rice as sides someone else brings? Those can be done ahead and reheated. A lot of people will use those as fillings in tacos, burritos and such.
Items such as tomatoes, lettuce, pico and avocadoes or guacamole are best prepared closer to serving. When you buy and prep your lettuce, consider that some folks may not eat the tortillas or shells and opt for a bed of lettuce instead. I would have more lettuce than you think you will need, even if you don't have it all shredded in advance. You might have some bowls for those folks -- or not encourage the idea and let them use plates if so inclined.
I make my taco filling with ground beef, Fiesta brand taco seasoning (popular brand in Texas, but I don't know how available it is elsewhere)and follow their instructions but add 1 small can of tomato sauce per 1 to 1-1/2 lbs of ground beef (started that for my boys when they were younger and it stuck). The primary flavors are mild chili pepper, garlic and cumin. For chicken I have used the same seasoning but less, Penzey's Chicken Taco seasoning when I had it, or made it up. Ann Burrell has an oven roasted fish taco recipe on Food Network's site (looked to see if there was such a thing before suggesting the idea). Fish that you could roast on sheet pans in the oven rather than frying would be much easier for a crowd -- if you want to consider that (but then you get into the slaw too).

Rather than chopping up all the veggies, etc., and setting them out in lots of individual containers, Mexican Taco Pizzas is another idea. Slice in wedges and set out on platters so folks can grab a slice. Serve sour cream and sliced avocados on the side. Mexican Taco Pizzalife-in-the-lofthouse.com/mexican-pizza/
