I often make something similar, but typically its is more of a toss in ingredient into a bowl, use plain brown rice (not seasoned like here), add what I have on hand, top with more avocado and call it dinner. But I thought I would try this recipe since it seasons each component more and is a bit different from my usual. It has some of my go-to ingredients and I thought it was really good. An easy recipe, super flexible to change up. I didn't follow exactly. I did made my own brown rice (I cook it like if making pasta, a great tip I found on the old CLBB) and not the packaged rice. Made this last night and liked it a lot. had to leave chipotle off Dh's but added it to mine. used green cabbage and feta rather than queso fresca, otherwise followed. will repeat this. the rice was especially good.
ETA I plated it up much like they show. DH just mixed his together but I kind of liked the separate parts. also that allowed me to add the chipotles just to my portion, and also cilantro. the purple cabbage looks nicer than the green but I like green texture better.

Varaile, sorry just noticed your post, thx for the review and your tweaks. So I'm not the only one that dish didn't look like the picture. I couldn't bother with arranging the beans and slaw just right, it was dinner time! And I agree, a good recipe and easily changed up based on what one likes/has on hand.
traildoggie, so glad you liked it. I thought the rice was good too, usually I just go for plain ol' brown rice so this definitely had lots more flavor. I could definitely see making the rice again, to give some more flavor even when I'm just doing a basic beans, rice quick dinner.
