I made this recipe for "Joy the Baker's Olive Oil-Braised Chickpeas (More or Less)" that I saw on food52 and thought it was really good (I didn't really follow that closely, omitted some ingredients, halved recipe, cut back on oil but didn't measure/note). Lots of salty ingredients so might want to watch the amount of salt added. Basically you saute an onion, then toss in a baking dish, and add the other ingredients, bake, then top with some smoked paprika, cheese, and serve with some good bread. Some of the ingredients: high-quality olive oil, onion, capers, thyme (they suggest rosemary or sage ---- any other ideas to season, not a fan of some, don't often buy ....), olives (I omitted since don't like)), lemon, feta, crusty bread. food52.com/recipes/64161-joy-the-baker-s-olive-oil-braised-chickpeas-more-or-lessThe recipe is real flexible. In the comments, many cut back on the oil (I did too, and some that didn't said too much oil), can leave out cheese and such.... I'm not surprised I liked it, chickpeas, good olive oil, lemon, some cheese, and crusty bread. I could see having it with a grain instead of bread too.
