Charred Eggplant with Chermoula (CL 416) was one of the sides at our cooking club dinner. I didn't make it but the person that did said pretty much followed. Really good!
You basically cook some eggplant in cast iron skillet and top with this cilantro herb sauce.
Some of the ingredients,, cumin seeds, coriander seeds, lemon, paprika, garlic, cilantro, parsley, olive oil.....
