Charred Eggplant with Chermoula (CL 416) was one of the sides at our cooking club dinner. I didn't make it but the person that did said pretty much followed. Really good! You basically cook some eggplant in cast iron skillet and top with this cilantro herb sauce. Love that. I usually grill up 1/2s of eggplant and freeze them. When I'm in the mood, I microwave, add tahini, cilantro, garlic, cumin and mash it all up and spoon it over the hot eggplant. DROOOOOOOL worthy! Great to know cast iron works equally well.

I never thought of grilling and then freezing eggplant. I can't wait to give that a try. And, I just copied down the sauce you make for the eggplant -- it sounds so good. I love those flavors. Thanks so much for the recipe idea.
I don't know if my friend used cast iron, but the recipe didn't mention that -- wanted to get a good char on the eggplant.
