I made this a couple of days ago and thought it was very good and super easy to pull together since basically just chicken pieces, sweet potatoes and onions cut up, tossed with some olive oil and then add some maple syrup and ..... All cooked in one baking dish. I cut the recipe back and use one chicken breast, two small sweet potatoes, a sweet onion --- and didn't measure the olive oil and maple. I just used what I thought worked. I did up the maple a bit based on the reviews. The recipe calls for thyme but I omitted and just used kosher salt, lemon pepper and ...... When I make it again, I will go heavier on the veggies. They did get a bit brown in parts, I think I cut them a bit small or cooked too long, but I did like that caramelized flavor.
