I've read that certain pies, like pecan pie, can change texture if you make them ahead of time.
I would like to make a few pies today to free up some time tomorrow. Are there certain pies which should or shouldn't be made a day in advance?

Our family does Pie Hour for Thanksgiving.
I make ALL of my pies a day ahead of time. Some years that's as many as 15 assorted pies. I've never even thought twice about it. I'm VERY particular about baked goods and serving them at their best (I throw out cookies that last longer than three days).
