A really good easy dinner --- great for a busy night! Tonight I made this recipe for quesadilas, along with a simple salad and dinner was done

Chicken Cheddar and Apple Quesadillas

6 flour tortillas -- (8-inch)
6 ounces cheddar cheese -- shredded
2 boneless, skinless chicken breast halves -- grilled or poached, and shredded
2 apples -- thinly sliced
1 tablespoon chopped fresh thyme -- or 1 teaspoon dried thyme
olive oil spray
Place tortillas flat on a work surface. Fold each tortilla in half, press down to make a crease, open tortillas. Sprinkle cheese over half of each tortilla; top cheese with chicken and apple slices. Sprinkle with thyme. Fold tortillas in half. Press down on each.
Coat a large nonstick skillet with cooking spray, heat skillet over medium heat. Place 2 quesadillas in the pan, and top quesadillas with a cast-iron or other heavy skillet. Cook 1 1/2-2 minutes on each side or until tortillas are crisp and lightly browned (leave cast-iron skillet on quesadillas as they cook). Remove quesadillas from pan; set aside, and keep warm. Repeat procedure with the remaining quesadillas. Cut each quesadilla into wedges.
