A few days ago, after getting back from vacation, I had practically zip in the fridge. Days earlier, I saved this recipe for Beef Burrito Casserole (Budgetbytes.com). I turned out I had lots of the ingredient on hand (in pantry or freezer) and I was able to come up with dinner. I made a bunch of changes, added a few ingredients and/or omitted some, so I definitely didn't follow that close to as written. It was nothing fancy, a comfort food type of recipe. I pulled out some leftover rice (she suggested to use leftover or chilled rice to avoid it being mushy), a jar of salsa and..... bawstinn --- you are so welcome. Just good easy dinner and a good way to use up that opened jar of salsa, some leftover rice etc. I did change up quite a bit based on what I had -- I did like it, don't even remember all the changes.

Perfect! I needed something for dinner that utilized some leftovers. I'll completely change it up, and I'll need to make some rice this morning to have it chilled later, but I think it will work. I have leftover chicken, so mine will be chicken-inspired. I think I have everything else somewhere in the fridge...
I may have to make some cornbread to go with for my DS, as I don't think this will be his favorite thing.

I changed up the recipe so much I was reluctant to even post a review -- well it did have rice and salsa and..... I think the recipe is super flexible, if you make it (or use it as just a recipe idea), hope you enjoy!

Holy cow, this was really good. That cream cheese layer!!
I used leftover chicken, corn, pinto beans, and I sauteed a red bell pepper with a couple of scallions. I also ended up doubling the chili powder to 1 teaspoon. I used a colby-jack for the top, and overall, it was just really delicious and comforting. DS wasn't crazy about it, but he didn't hate it. DH and DD both said to make it again for sure.

DH and DD both said to make it again for sure. So glad that it was a hit with three of the four "waz' family! And I love the tweaks that you made. I'm a big fan of meals that take hardly any time to pull together and have little cleanup --- great for a busy day or when not in the mood to do lots of prep or hands on work.

I'm really thrilled about the "new" leftover solution. I'm trying to be more mindful of utilizing leftovers here. My family will only tolerate so much soup. This was a nice change and completely flexible. Honestly, it didn't need the meat with the corn and beans in it. I think the next time if I have a can of diced green chilies, I will add some of those with the cream cheese layer.
