I have zero inspiration to get work done so taking a break .... I bought a bag of TJs frozen Marinated Eggplant, Zucchini, and Red Peppers (I think that's the basic name). Have you bought this? If yes, what did you think? And how did you use it? I don't buy frozen veggies often and usually just corn, but this bag of veggies made its way into my cart.

I have bought this before to use on homemade pizza. I can't say it rocked my world even though I love the vegetable combination, but it was decent enough. I actually have another bag in the freezer now. My kids will go for it when I doctor up a frozen pizza for them and it is a convenient item to have in the freezer in the winter when the veggies at the store are sad and expensive and I need inspiration on homemade pizza night (we always do veggie pizzas). I could see using it on pasta or with any sort of grain embellished with some other things like fresh herbs or some mild Italian turkey sausage and cheese etc.... If you try it and don't care for it, take it back. I recently tried parsnip chips from T.J.'s as I love parsnips and their plantain chips are decent. Well, the parsnip ones were horrible. I took them back and was fully refunded with no questions asked.

Thanks Karen! I love that veggie combo too and was thinking of combining with some pasta, rice or some other grain, and maybe top with some feta etc.
And just like you said, it would be convenient to have especially during the winter. I so agree, TJ's has a great return policy and I have returned some items that I didn't like and knew I wouldn't finish. And in only one or two cases HATED!
I should give homemade pizza another try.
