I've roasted lots of veggies before, but not cucumbers, and never cooked them in any way. I came across a recipe that roasted kirby cucumbers and red onions and served with a sour cream dill sauce. I don't have the recipe handy but that was the part of the recipe that caught my eye since certainly a bit different. I think this is the first time I've noticed at a recipe that cooked cukes.
I used to order a Thai dish that might have used them in a chicken veggie stir fry dish (I think but it was years ago and had so many veggies and other ingredients) but other than that....
Have you?

Years ago, when I bought a Kikkoman booklet for 50 cents, I steamed them for this Szechuan stuffed cucumber appetizer (using all pork). m.kikkomanusa.com/homecooks/recipes/recipedetail.php?rd=1899 Also made the crystal shrimp, for an Academy Award appy party. Served the cukes on platters with pineapple chunks with toothpicks. Had dumplings/wontons, spring rolls, and a friend brought paper-wrapped chicken. Remember that? Can't remember what else. Think I'll stick with 'em chilled, if I ever dust the recipe off and try it again. Don't think they benefit from roasting, etc. P.S. The pic is much nicer in the booklet.
