Excuse the far from catchy title. Now that it is getting cooler out, I would like to freeze some food for quick meals. They could a whole meal (might just need a quick salad or.. ) or just help save time/jump start getting dinner on the table/less cleanup on busy days .....
The thing is I usually just cook for just myself so a whole try of baked ziti is not going to work (of course I could freeze in smaller containers) but certain foods just don't seem to translate that well for individual servings and small households. And more importantly, I think I lack the creativity and just seem to freeze that same ol' thing.
So there is freezing soup/chili (I love having soup on hand), freezing cooked rice for a quick side/stirfry, pasta sauce, perhaps meatballs, maybe some slices of banana bread for a snack. I usually have individual boneless chicken frozen, maybe a small portion of ground beef.
What are your favorite things and/or recipes that you like to freeze? Or things from the supermarket that you like to have in the freezer too? And feel free to post whether it is suited for individual servings and/or it makes enough to serve a group (since we all have different needs, might need a dish that makes a lot of food, or just want to have some individual meals, and often something can be sized up or down etc).

Things i freeze....it's a long list (I have 2 large upright freezers in my basement and even though 2 of my 3 kids are off at college now, I have not quite scaled back from cooking for 5 vs. 3 yet!!!). Anyway, right now things I have: -Frozen lasagna (or any casserole that can be easily sliced)-i freeze by the individual piece so very convenient for one. After I bake; cool the casserole, slice as desired, flash freeze slices on sheet pan, then wrap and freeze. I use a food saver bag to store so they stay fresh a long time, but I am sure you could wrap in plastic, foil, ziploc etc... Besides lasagna, right now I have vegetable Parmesan, eggplant parm., and Roasted vegetable enchilada casserole in the freezer). -Beans-some frozen already cooked in 1 c. portions; some frozen (presoaked) in 1/2 # portions -Cooked leftover rice (or other grains)-1 c. portions -Pesto- (basil and cilantro)-freeze in ice cube tray and then pop in ziploc -Grated ginger-I do same as for pesto -Soups and chilis-frozen in both 1 and 2 serving portions -Prebaked homemade pizza dough -Homemade breads, bagels, english muffins, rolls etc... -Blanched vegetables from our garden-kale, corn (raw), peppers of all types, tomatillos (raw) -chicken stock-frozen in 1, 2, and 4 c. bags -bananas and other frozen fruit-for baking, smoothies etc.... -homemade turkey meatballs -Homemade sauces-e.g. marinara, tomatillo, pizza sauce, enchilada etc... Then there is the "usual" stuff like chicken breasts, assorted fish/seafood, frozen tortellini, a few convenience items e.g. frozen store bought pizza for kids, Chinese potstickers, etc....etc...etc....

Karen --- Your list is super helpful! I've already made some things for the freezer --- one being that CL Salsa Chili that you recommended a few years back, It is a favorite of mine. In fact, I think I might have that in the next few days, and might have it over some brown rice (also from the freezer).
I will be adding some more things, and will be adding lots of your suggestions!!
