ROASTED CAULIFLOWER WITH SESAME
Notes are his. Surprisingly ordinary recipes with a few exceptions but a lot of writing about his experiences so good for the fan. Recipes are solid

This shit is compulsively delicious. One adult could easily eat the entire head of cauliflower for dinner and feel good about it.
Serves 4 to 6 as a side dish
1 head of cauliflower, broken by hand into florets ¼ cup extra-virgin olive oil 2 teaspoons salt 1 teaspoon ground coriander 1 teaspoon dried oregano Freshly ground black pepper to taste 2 tablespoons tahini 1 tablespoon white miso 2 teaspoons red wine vinegar 1½ tablespoons water 3 tablespoons toasted white sesame seeds
Preheat the oven to 450˚F.
In a large mixing bowl, combine the cauliflower, oil, salt, coriander, oregano, and pepper and toss well to evenly coat the cauliflower with the oil and spices. Transfer to a sheet pan and arrange in an even layer, making spaces between the pieces as much as possible. Roast the cauliflower in the oven for 20 minutes, turning the tray and lightly tossing the pieces halfway through.
While the cauliflower roasts, combine the tahini, miso, vinegar, and 1½ tablespoons water in a small mixing bowl, and whisk until smooth.
Once the cauliflower is done, remove it from the oven, transfer to a mixing bowl, and toss with the sauce and sesame seeds to coat evenly.

Oh that does sound good! I love roasted veggies, and this just confirms that I need to buy some white miso (I've seen a bunch of recipes using it). Thanks for posting and for the review!

This is another recipe using white miso! I have looked and can't find it. do you need to use a specialty store for it? I used to find it without a problem. it came in a white tub, was on the shelf with Asian products. not refrigerated. I am off to google it, but any tips on where to look for it?

I don't think I've ever seen it NOT refrigerated. I usually find it near the tofu at specialty/upscale grocery stores. I don't recall ever seeing it at a Safeway. I wonder if Trader Joe's has it?? I'll have to look next time I'm there.

I've never seen at Trader Joes.
I've seen at Whole Foods and you would be able to get I think at any "health" store or as mcgee wrote any upscale supermarket catering to foodies.
I would suggest an Asian market like Ninety Nine Ranch but my problem with that place is that even if they have something, it's impossible to sometimes find and the personnel are no help.

Found it!. got it at QFC. it was a much smaller package than I expected. it was on the top shelf. I can barely reach up there, much less see, and the packages were flat and semi "shrink wrapped", and lying flat so the labels weren't visible. I will be trying this soon. have a head of cauliflower that is just begging for this treatment.

Made this tonight. I liked it ... very good and not difficult at all... but not over the top for me. Didn't really go with the rest of dinner since wasn't sure what to make with it. I lean toward plain cauliflower roasted with olive oil. thanks for posting... what did you have it with? I found the miso sort of liquidy in a squeeze tube, not thick like peanut butter, which is what I used to get. I had it with a green salad and some baked fish with chili and garlic. have some left over so will have it for lunch today. sometimes I need to have things a few times before I appreciate the flavors. needs to grow on me.

This sounds drool-worthy. I love tahini and miso and cauliflower. DH thinks cheese sauce is the solution for all things! Not sure how much he would like this, but that means more for me I love the old CL recipe (need to find it again) that is roasted with mustard sauce. I also love it just plain roasted. Someone posted a gratin--what's not to love about cheese and cream. I'm trying to plan meals for the festivities coming up....reading all recipes and happy to tweak.
