Roasted Cabbage Wedgeswww.gimmesomeoven.com/roasted-cabbage-wedges/PREP TIME: 10 MINS COOK TIME: 25 MINS TOTAL TIME: 35 MINS 1 head green cabbage 2 Tbsp. olive oil kosher salt and freshly-ground black pepper Preheat oven to 450 degrees F. Line a large baking sheet with aluminum foil. Cut the head of cabbage into 8 equally-sized wedges, cutting through the core and stem end. If desired, use a knife to carefully trim off the stem on each wedge. Arrange the wedges in a single layer on the prepared baking sheet. Use a pastry brush or oil mister to brush/mist the top sides of each cabbage wedge with the olive oil, then season generously with salt and freshly-ground black pepper. Turn cabbage wedges carefully, then repeat on second side. Roast cabbage for about 10 minutes, or until edges of the cabbage and the bottom of the wedges are nicely browned. Then turn each wedge carefully and roast 10-15 minutes more, until the cabbage is nicely browned and cooked through with a bit of chewiness remaining. Serve immediately, and garnish with lemon if desired. My notes: I roasted at 425 rather than 450. And sprinkled with a bit of crushed red pepper.

NEVER thought to roast cabbage, even though I have roasted brussel's sprouts, cauliflower and green beans. EXCELLENT idea and thanks for posting!
If anyone tries this with red cabbage, report back. Can't imagine it being different....but....

Good stuff. I like roasted cabbage or BS with broad buttered egg noodles. Puts me in mind of haluski -- Eastern European dish. Could add kielbasa or sausage -- or even cooked sliced hot dogs in a pinch.

Thanks Andrea, that looks delicious. (Now I want to make my own pastrami, I need to talk to my friend who has a smoker.)

I love roasted cruciferous veggies, so this is on my to-do list for next week.
I also found this version at the kitchn blog which has the benefit of bacon: link.

Now I'm embarrassed. Had to Google green cabbage. Please correct me if I'm wrong - green cabbage is the same as white cabbage only "younger"

I've never heard of white cabbage **blush***
Just got home with two cabbages (red will be slaw and green will be roasted!). I could not stop thinking about this.... Curious if you guys think a blue cheese dressing would work with this.

mcgee, your reply basically answered my question. Lightbulb. What is called green cabbage in the U.S. Is referred to as white cabbage in my native language. Sorry for confusing you - but you helped me!!! Thanks This method of roasting cabbage sounds delicious!

I made this tonight and it was just so-so...wedges didn't cook up evenly and some had brown bits while other areas were nearly raw. I think if I do this again, and I will, I will shred the cabbage before roasting it making it more like hash browns.

I love this braised cabbage recipe - the leaves get nice and brown and toasty. I got the recipe off the old CLBB but I can't remember the poster's name. I think it was something like Limmerman but that's not quite it. The recipe itself is from the book "All About Braising" by Molly Stevens. www.thenourishinggourmet.com/2008/11/worlds-best-braised-cabbage-2.htmlETA: I found the name of the original poster of the braised cabbage recipe. It was Lrimerman. I was so surprised and happy that I found it, I had to post
