My family especially loved the dip and it was so easy.
5/5 Oatmeal Griddlecakes (Plain Dealer) Eh. Something off. Did waffle though!
5/11 Stir-Fried Pork and Broccoli with Cashews (Emeril) I messed this up and made substiutions and it was still really good. The bit of steaming the broccoli in the pan with chicken broth was a great trick.
5/18 Pineapple-Lime Cooler (RR 6/13) This was really good. Wish the measurements were more specific.
5/18 Key Lime Pie with Pretzel Crust (KA) Very good. Love the salty/sweet. Used regular limes. Doubled and made in 9x13. Line pan with parchment.
5/20 Rhubarb Mascarpone Mousse Cake (Gourmet 4/11) Actually not too difficult and interesting, but I wanted it to be tastier. Had to make glaze rhubarb/strawberry because of lack of liquid and color of cooked rhubarb. Mascarpone mousse was delightful. Strawberry/Rhubarb jello was delightful.
5/26 Chocolate-Espresso Slab Pie (Family Circle 11/2016) This was really good. Dressed it up with some Heath bars. Maybe make in a 9x13 instead?
5/26 Loaded Baked-Potato Dip (MSL) This was ****. They almost licked the bowl clean. I liked better with crackers than chips. Did not add milk.
5/26 Smoked Queso with Monterey Jack (theovenlight.net) Adapted! Shallot. No jalapeno. Stirred in some roasted poblano. Definitely needed salt and I wanted to add a bit of cayenne. More stretchy then liquid, but I did like it. Method seems like a great one and adaptable.

I made a mayo-white miso-togarashi-garlic-lemon juice-garlic paste smeared over a copper river salmon which turned out amazingly well. We had lots of repeaters this month.

I made the Cauliflower Pizza Bake that PattiA posted previously and found it ok. I said I would like it better without the pepperoni and DH said he thought it would be better without the sausage 🤣. I might play around with it because I like the concept. I also made this Chicken Noodle Casserole and thought it was just ok too. It needed something - maybe broccoli ? I liked leftovers better which is usually the case with casseroles. The hit for me (maybe not DH though) was this Creamy Cucumber Salad. My mom made something very similar and this really hit the spot. I even bought more cukes today so I can take a big batch to work for my lunches this week. For tried and true I made Italian Beef, Tortilla Soup, and bean tostadas. Erin - thanks for keeping this board alive. I’m going to try to contribute more 🙂
