OMG does that look great. I think it would freeze well but not 100%...it may weep a little since there are eggs in the product, but enough to cause issue...I don't think so. Hope bakers chime in.

I decided not to make the cake ahead of time. I'm taking Friday off from work and will make it in the morning. I'll report back. I don't know if you guys watch The Great British Bakeoff but the recipe is from one of the contestants, BENJAMINA EBUEHI.

McGee - I love that show, too! How did you come by the recipe? (Curious minds want to know.)  I also miss the old CLBB. Such a shame they took it down. We've done our best here ... Perhaps times have changed. I know the emerging countries are all coming on board now and many folks want to join us. But almost every time I allow someone in, it appears they either don't understand the rules about SELLING STUFF OR SITES HERE...I dunno. SPAMMERS seem to come about. So, I'm less inclined to admit new members. IF we had, I wonder how that would have gone. Oh well. We did what we could. If folks don't need or want our little spot, ok. Perhaps the recipe (copyright) protections that the board owners have asked us all to respect is what keeps folks away. I suspect it's mostly that TIMES HAVE CHANGED DRASTICALLY. Looks to me, in the little bit of looking that I do, that other sites are having similar experience. I NEVER COULD UNDERSTAND WHY "COOKBOOKER" didn't get more activity. It pretty much still lives on because of the few long-time contributors that still share there. I love that place, too. sigh. HAPPY BIRTHDAY TO YOUR BELOVED HUBBY! Catbatty I've seen superfine sugar in some stores but I can't recall which ones. The recipe does say if you can't find superfine to blitz regular sugar in a blender. And one reviewer said she just used regular sugar without blitzing it and the cake came out just fine.

I made this yesterday and was disappointed in the results but I think it was due to cooks error. It called for an 8” pan but I didn’t have one and surprisingly couldn’t even find one in the stores, so I used a 9” pan. I did see this recipe on another site using a 9” pan so thought it would be ok but it really wasn’t. I baked it for 38 minutes when there was only a slight jiggle in the center as the directions stated, but we both felt it was undercooked (maybe it’s my oven). I added the full amount of cayenne (1/2 teaspoon) because my cayenne was pretty old and while I didn’t find it too spicy, DH did. What’s weird is that he pours Tabasco all over his eggs which is way too hot for me, but not for him so go figure. Anyways, the overall flavor was good but I wouldn’t make this recipe again. It is super easy though.

Sorry it didn’t turn out the way you expected…I know how I feel when I try something new and end up disappointed in the result… I made my daughter a chocolate chip cookie cake for her birthday celebration tomorrow…and just picked it up off the floor after tipping the cooling rack…her response? Oh that’s the way the birthday cookie crumbles… Hope your husband enjoyed the rest of his birthday. 🥳🎉
