Well, this month flew by! I think the rest of the year will do the same. The pork chop one is a must try. I think it would work with chicken and any soft cheese. I considered Boursin and just cc with herbs stirred in.
9/4 Texas “Treasure” (Delish) Good bean dip! Used 1 can refried and 1 can white beans. [This was originally called Texas Trash, but, um, why?]
9/4 Fried Ice Cream Cake (ATK) My first instinct was correct: brownie too hard/frozen. Ice cream melting. Would make as sundae—ice cream + Heath bits + cinnamon = yum.
9/9 Yotam Ottolenghi's Sweet Corn Polenta with Eggplant Sauce (Food52) This was good, but a little too involved. BUT, perfect for a summer veggie feast. Also, I only added half the called-for cheese so… [On reheat got bitter?]
9/14 Peach Yogurt Cake with Cinnamon Glaze (thekitchn) Yum! The glaze needs to be a frosting. Went light on the peaches (2c? maybe a little over) and was glad because it was perfect.
9/17 Simple Eggplant Parmesan (SK) Good, but I wanted to add some paste to the sauce and forgot so a little thin.
9/25 Tender Plum and Poppy Seed Cake (F&W 6/2023) This should have been good, but I overbaked it. Done before 50 min.
9/27 Pork Chops with Cherry Tomatoes and Balsamic Reduction (CC 2&3/2015) This was AMAZING. Used goat cheese instead of blue; no butter. Didn’t have any basil to add.

I cooked mostly tried and true recipes but I did try a couple new ones that were losers. One was a Mexican casserole that I got on this board but I can't recall the name of it. I think it would have been good with the right salsa; I tried a new one and it was horrible. I can't recall the brand but it came in a bag and didn't require refrigeration prior to opening it. I bought it at a pricey grocery store so thought it would be good but boy was I wrong. The other loser was: Quinoa Broccoli CasseroleI have enjoyed a lot of recipes from Cookie & Kate but this one was not one of them. DH and I each took about three bites and then threw it in the trash. Not sure what was wrong with it but it tasted horrible. It got a lot of good reviews though. ETA: I found the Mexican Casserole I mentioned above. It was Chicken Enchilada Bake with Salsa Cream Sauce. I bet it would be really good with the right salsa since that's the predominant flavor. The stuff I used was terrible and I didn't even think there could be such a thing as a terrible salsa.

Yes! I posted that. I think it was from Bobmark. I know I got it off a casserole thread long ago. Too bad it was a distaster for you!

I tried an air-fry baked potato that was quite good, with a nice, crispy crust. Will do this again!
The actual recipe is incredibly long but simple, so will just post the basics here
Wash and dry potato(es). Prick all over with fork. Rub some olive oil on potato with your hands, then sprinkle salt and pepper plus any other spices you like.
Pre-heat air fryer to 425 degrees, add potato, bake for 20 minutes, turn, bake for another 20-25 minutes. Definitely start checking after total of 40 minutes.
