Ah, cannot wait for the fall temps! I did good this month. My new "good." Headed to a picnic tomorrow and trying two new recipes so September is off to a good start, too. Hope everyone is making it through <3
8/5 Summer Fruit Cobbler with Vanilla-Mascarpone Biscuits (Food & Wine 8/21) Really good and SO adaptable. I made peach/blueberry; mascarpone; a little almond extract; almond meal+reg flour; lime zest and juice. Did get soft at 10 hours.
8/14 Zucchini Baked “Ziti” (delish) Really good! Don’t add extra sauce. Try with sausage?
8/21 Blueberry Icebox Pie (Family Circle 5/2017) Really good! A hit at SC. Fun color. Made in 9inch springform for ease of serving.
8/27 Summer Skillet Lasagna (Woman’s Day 23, but July 2016 online &GH September 2022 w/same picture!) Used all my marinara & mascarpone from the dessert. Pretty good. Would add sausage and maybe use 1c broth.
8/27 Peach Delight Icebox Cake (thekitchn) Delish! Would do 1 big cream layer in middle. Grahams, peaches, all of cream, peaches, crackers, whipped cream. Did in fridge, not freezer. Used half whipped cream as topping and half for mascarpone.
