Why, you ask? Because my daughter made a soup she liked and I decided to make HALF the recipe to try it while husband is out of town. At market, I bought all the ingredients the recipe calls for, except: they were out of the escarole. I decided that arugula would have the taste my daughter mentioned about escarole (some bitter) and so I bought a mixture of arugula and spinach. Today, I went looking on line and TA-DAH!! Looks like my guess was a good one.
Back to the stove I go...
