I don't eat much meat, but I do eat a lot of vegetables. The problem is, vegetables decay at very different rates so you need to pay close attention to get the very best out of their flavours. So, you buy a load on Monday and by Tuesday some are already deteriorating (like scrumptious corn cobs... you have to cook and eat them almost before they've been delivered).
Anyway... there'll come a time when you look at the 'best before' dates and need to take action. Hence a punnet of button mushrooms and a bag of (brussels) sprouts that are just demanding to be consumed. An unlikely combination, for sure, not helped that sprouts only take 3 minutes to steam yet mushrooms need only a zero cook time. Yep, by the time mushrooms come to pressure, they are already cooked to perfection.

So, what to do?
Answer: Layer the sprouts in a steamer basket then add the mushrooms on top. Sprinkle them with mixed herbs and garlic granules. Add large splashes of low-sodium Soy and Worcestershire sauce for umami, then add 1/2 litre of boiling hot water over them all and pressure cook for 3 minutes. NPR immediately and set steamer basket aside. Dump a punnet of cherry tomatoes and pitted olives in the leftover broth to warm... extra interest!
Transfer contents of steam basket to an already-warmed serving bowl then add drained warmed tomatoes and olives. (Keep the vegetable broth for re-use... it's wonderfully flavourful.) This is a surprisingly delicious (and very cheap) meal with wonderful contrasting textures and flavours... and an awesome aftertaste.The only thing I forgot was to add dollops of butter before serving.
I've owned an Instant Pot for about a year. I no longer need step-by-step recipes. Instead, I now love throwing random fresh ingredients together to experience the taste. Best gadget that I've ever bought, especially sauteed mushrooms on toast to start the day.
