Catbatty's Quick Chili Beans: (base can one or two of Nalley's Vegetarian Chili, then a few cans of other beans--black, pinto, chile beans, with liquids. Tomatoes, spices. OH, and first, saute green bells, onions, garlic, any green chiles. Cumin, chili powder...plus whatever else Mex-type flavor is on hand.) Little pinch sugar, salt, pepper, water to keep liquid and from burning.) We make big pot and it's gone in 2 days.
Baked halves of Delicata Squash: 350F, 1 hour: butter, salt, pepper, maple syrup, cinnamon placed in each half before baking. (A favorite of ours.)

Brussel's Sprouts (or Broccoli): OMG...OMG...super winner!!: Roasted Brussels Sprouts w/Garlic (Mark Bittman author, husband found it in NY Times: cooking.nytimes.com/recipes/1890-roasted-brussels-sprouts-with-garlic) (I went nuts. Next time he made it with Broc instead of Brussels... I went even more nuts! We put in more garlic than called for....oh the BALSAMIC gives it such a great hit of flavor!!) I dare anyone to make this and not come away a lover of these two veggies. Believe it or not. And BS's are not my fav veg usually. (I liked it best when he really got the garlic good and browned...like candy in my mouth!!)
