I want to make some soup to have for lunch/dinner and to freeze the rest. I'd like to use just what I have on hand ...... have lots of canned chickpeas, canned diced tomatoes, stock, one onion, lemon, garlic, parm, pasta, rice. Anyone have an easy/basic soup recipe using some of these ingredients? Perhaps pasta fagioli type or any other type of soup?

Karen, I made the chick pea soup with dumplings and we both loved it. I served it with garlic bread and it was delish!!! Thanks again.

You can try this one:
Chickpea and Pasta Soup
Ingredients:
-1 tablespoon olive oil -1 onion, diced -2 cloves garlic, minced -4 cups vegetable broth -1 (14.5-ounce) can diced tomatoes -1/2 teaspoon dried oregano -1/4 teaspoon red pepper flakes -1 (15-ounce) can chickpeas, drained and rinsed -1/2 cup small pasta (such as ditalini or shells) -1/2 teaspoon salt -1/4 teaspoon black pepper -1/4 cup fresh parsley, chopped
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the vegetables are soft, about 5 minutes.
2. Add the broth, tomatoes, oregano, red pepper flakes, chickpeas, and pasta. Bring the mixture to a boil then reduce to a simmer. Simmer for 15 minutes, or until the pasta is cooked.
3. Season with salt and pepper and stir in the parsley. Serve warm.
