Erin, that must be SO SO frustrating. So sorry this happened to you. I haven't been keeping track of my recipes lately but I recall a few good ones including the following:
Cheesy Eggplant Zucchini Bake-Claire Saffitz. Layers of eggplant, zucchini, summer squash, herbs, and cherry tomatoes with cheese. Light, filling, seasonal and delicious.

Homemade Fig Newtons-Cookie Madness (found some figs cleaning out the freezer!). Tasty but not an easy recipe to assemble.
Monster Cookie Bark-Cookie Madness (made as part of care package for peanut butter loving child #2 and sneaked a few back for me!!)
Cheesy Marinara Beans-Eating Well. Good flavor but very "saucy" and that was not necessarily a bad thing either!
Fruit and Nut Energy Bars-I don't remember source but a moist chewy bar with lots of oats, dried fruits, and nuts bound with a lot more peanut butter and honey. And yes, I also add chocolate chips!
All of the following were from Milk Street Kitchen which I made for some dinner guests. They were all delicious but the chicken, eggplant, and potatoes were exceptional. The zucchini salad and tomato salad were also worth repeating but did not hold up as well as leftovers which was not to surprising:

Raw Zucchini Salad with Chickpeas and Tahini Yogurt
Raspberry Walnut chocolate chip Rugelach-this was dessert with some fresh strawberries and ice cream but not a Milk Street recipe. It was Cook's Illustrated.
