When I saw this recipe I thought I would post it. Looks perfect for a super hot day! Or cold day, warm day ..... I don't make ice cream. but I would have my spoon ready if it was in front of me. Better Than Sex Peanut Butter Ice Cream
¼ cup sugar 3 large eggs 1 cup skim milk ½ cup creamy peanut butter 1 cup Fat Free Sweetened Condensed Milk* ½ cup Fat Free half & Half* 2 tsp vanilla
In a medium mixing bowl beat the sugar into the eggs until slightly thickened and pale yellow. Set aside. Bring the milk to a simmer in a medium saucepan over low heat. Slowly beat the hot milk into the eggs and sugar. Pour the entire mixture back into the pan and place over low heat. Stir constantly with a wooden spoon or whisk until the custard thickens slightly. Do not let the mixture boil or the eggs will scramble. Remove from the heat and beat in the peanut butter with a whisk.
Pour the hot custard through a strainer into a large clean bowl. Allow to cool slightly, then whisk in the condensed milk half and half and vanilla. Cover and refrigerate until cold or overnight.
Optional: ½ cup mini chocolate chips. * I often use regular instead of fat free, it gives it a creamier texture and doesn’t freeze so hard if you have it for longer than 1 day…

I made a no-churn ice cream once--Vietnamese coffee ice cream. Now that I think of it, it was probably Vietnamese because of the condensed milk. But PB/chocolate has my heart These are going in my to-try folder!

I actually tried two, but only one was no-churn. Here are links to both.
My notes: Good texture for no-churn and easy. Chill all ingredients? Took long time to whip. Small amount!
My notes: SC loved texture from cond milk. Coffee flavor a little too much? Add a bit of sugar or serve with whipped cream?

I will definitely try it. When I make ice cream I love adding orange juice (usually use this one for making juice).
