Slim pickings this month, but I did find the perfect potluck recipe and made the vegan cookies from February again.
My first August recipe is in the oven right now--a decadent peach cobbler from Bon Appetit.
Catbatty, I preferred the other veggie bean recipe you posted--I think I made it for the 4th of July last year!
7/26 Yellow Rice Salad with Roasted Peppers and Spicy Black Beans (BA 6/01) I thought this was really good—vegan, room temp, pretty, adaptable. A little more lime and a bit more salt. Used chipotle powder instead of peppers. I ate all the leftovers so that is saying something!
7/4 Baked Goat Cheese (CC) Really good app. Too much sauce for cheese—could easily add more cheese.
7/18 Steak Skewers with Scallion Dipping Sauce (BA 7/12) Good—used whole roast. Did not baste. Probably more flavor from marinade if skewers.
7/4 Vegetarian Baked Beans (Ivy Manning/Catbatty) Baked up nicely and liked double method, but preferred last year’s.
I can only remember the most recent ones from the month but here goes:
Excellent: -Tomato Pie-Vivian Howard -Balela Salad-TJ copycat recipe -Zucchini Chickpea "burgers"-Eating Well -Zucchini Hummus-me. This was wonderful! -Grilled Zucchini Caponata-A Zest For Life blog -Spicy White Bean Sausage Escarole Soup-me -Eggplant Parmesan-Sam Sifton. Not traditional breaded and fried. Very light and flavorful. My new favorite eggplant Parm. -Sheet-pan Roasted Chicken (Turkey in my case) Meatballs and Chickpeas in a Spicy Harissa Tomato Sauce-Claire Saffitz. Also added red onion and cauliflower and served over a couscous pilaf I made up with feta cheese. SO YUM! -Italian Fish Stew with Beans-Real Simple Magazine. Another delicious winner this month. I used flageolet beans.
Good: -Egg Sausage Cheese Stuffing Breakfast Casserole-Kraft. Made for my husband who loves Stovetop but not my thing! He liked it -Chocolate Cookies with Cherries and Pecans-Milk Street Kitchen-good flavor and not overly rich but I am just overall not a chocolate cookie fanatic nor a big sweet eater.
Repeaters i.e oldies but goodies: -Persian Legume Noodle Soup-Ottolenghi -Pasta Fagioli-Olive Garden copycat -White Beans with Tomato and Sage-Milk Street Kitchen -Bran Flax Muffins-Bob's Red Mill-added zucchini to use garden supply -Rise and shine Breakfast muffins-? source-I think it was an old old add for the peanut board(there is peanut butter in the muffin). Also added zuccihini because my garden made me! -Caper dill Lox yogurt cheese-Cook's Illustrated-made this to use up scraps from my homemade lox when I sliced it up and used it for a brunch I served on homemade bagels.
For August I have already made (to freeze): Baked Ziti with Summer Vegetables-and the summer veggies are? You got it!! ZUCCHINI! and with the ones I pick later this week probably gonna do Smitten Kitchen's Zucchini butter spaghetti. Also made Braised Cauliflower with Tomatoes and Feta (Milk Street kitchen).
I always surprise myself that I remember as many as I do each month even with not tracking anymore. I guess i have food on my brain a lot!!
