Make Again
5/23 Chicken and Rice, Street Cart Style (SK) Really good—esp. all-in-one meal. Marinade seems typical, but turned out more delicious than usual? 😊
5/18 Smashed Chicken Burgers with Cheddar and Parsley (NYT) Really good. I didn’t make the salad—just dressed some lettuce and avocado to top the burgers. I also didn’t top with mayo/must because I am not a huge fan. But they were tender and flavorful—delish.
5/9 Yellow Sheet Cake with Chocolate Frosting (CI 9&10/20) Good cake, even with unbleached cake flour, despite their warnings. And EXCELLENT frosting. Used TJ’s dark chips and Droste.

5/23 Rhubarb Cobbler (NYT) Delicious biscuits: I doubled. Cooking time seemed a little long as rhubarb just pretty much disolved.

Chorba Frik-Chicken soup made with freekah and Ras El Hanout (I made my own) from Chicken Soup Manifesto by Jenn Louis Eggplant Raita-Nik Sharma Sesame and Tofu Broccoli Stir-fry-Hetty McKinnon Honey Nut Biscotti-Joanne Chang. I changed up the "mix ins" since I am not a big pistachio/nut fan so mine had almonds and chocolate. Perfect with a subtle honey flavor. Brownie Toffee Brittle Parmesan Cauliflower Steaks with Tomato Herb Bean Ragu-Eating Well Spiced Tahini Whitefish with Cilantro and Pistachios-Milk Street Kitchen. EXCELLENT for so little effort Tik Tok Baked Oatmeal-Quite surprised how good this was and so many flavor possibilities. I did not blend dry ingredients completely as I like some texture but very creamy and hearty Mexican Stewed Beans-A favorite and repeat from Milk Street Kitchen. Used Rancho Gordo San Franciscano bean which were very fudgy and tasty here...like a chocolatey pinto bean. Fra Diavlo Chicken and Broccoli-Milk Street. Also good but touch spicy Baked Chocolate Oatmeal Muffins-Similar to tik tok baked oats but obviously chocolate flavored and baked in muffin tin Salmon Poached in Tomato Garlic Broth-Bon Appetit Tot Casserole with Corn and Zucchini-Eating Well. used cauliflower tots on top. never had them before and actually quite like them to my surprise. Also used ground turkey instead of beef. Very good. Matbucha with Eggplant-Tori Avey. Excellent on bread and crackers Bran Raisin Muffins-King Arthur Flour. Made some changes but very moist and delicious Claire Saffitz bagels-Also modified these to include some multigrain cereal mix and turned out perfect! Spas- Armenian egg-yogurt thickened chicken soup with wheat berries from Chicken Soup Manifesto by Jenn Louis

First time report for me! Hope it is good enuf. Most all are vegetarian, except for the optional pepperoni on Pizza Bites. Several of these I have typed up recipes for.
Sunflower Special, Cinnamon Mornings Cookbook by Pamela Lanier, pg. 56. (Vegetarian - Green chile egg crustless quiche, basically) - always good, doubled the chili powder and added a pinch of garlic salt. Recipes abound for this dish, all good, but I most often use the recipe found in this book. Been making this for years. Reheats in microwave nicely. Always serve with dollop of sour cream. Husband covers his with salsa. (Editing to add: this last time, I used freshly broiled, peeled poblano chiles instead of canned, whole--but roughly chopped-- green chiles--Anaheim and thought it increased the umami. Might do that more often. A couple of them, chopped roughly.) (BTW: I never buy pre-chopped canned green chiles. I buy canned WHOLE. Better if slice or strip or dice from whole, imho.)
Chewy Oatmeal Cookies - King Arthur Whole Grain Cookies, pg. 314. Always a favorite here. (Lately, we changed out the 2 cups dried fruit to 5 oz chopped up raisins and 5 oz shredded sweetened coconut.) I am not crazy for coconut, but in these cookies: THE BOMB! Husband makes these at least once a month.
Zucchini Pizza Bites - lots of recipes on internet. Can't find my original...think it was Fine Cooking. Always a winner. (Lately been using Classico Tomato & Basil Pasta Sauce as our most-loved store-bought pizza sauce.) Slices of zucc, dollop of sauce, slice of pepperoni, olive, Jack or Provone, feta...bake or broil or both.
Vegetable Broth - (Vegetarian) - 101 Meatless Family Dishes Cookbook, by John Ettinger, pg. 12 -- uses lettuce as one of the ingredients. we love that because we grow and have surplus of it. Froze most except what we used in his Lentil Soup and Sweet Pepper Soup. Will make again.
Lentil Soup - (Vegetarian) - 101 Meatless Family Dishes Cookbook, by John Ettinger, pg. 12 -- not spicy enough for us (plus, he seldom calls for salt, so we had to add it) Would be very good for folks who like or require fairly bland.
Sweet Pepper Soup - (Vegetarian) - 101 Meatless Family Dishes Cookbook, by John Ettinger, pg. 29 -- Was ok. Might make again, probably would not bother adding the almonds.
