A quiet month for me. I am hoping for more new recipes in May.
4/28 Caramel Pie (?? This recipe has been in my to-try folder FOREVER.) Good—used the crockpot dulce de leche and made a deconstructed pie. Very thick—cut with whipped cream and then top with more? Added some toffee bits. Toasted pecans would have been amazing.
4/25 Fried Peach Pies (CC 7/16) Easy, make-ahead. Crust was spectacular. Could use any fruit, I bet, for filling. How would they be not eaten immediately?
4/25 Double-Garlic Roast Chicken with Onion Gravy (BA 10/20) This was good, but needed tweaked. The gravy was excellent. I did sprinkle some flour over the onions and fat before adding the liquids and I would do that again.
4/11 Apricot, Pecan, and White Chocolate Bread (BH&G Food Gifts) Just one of those days: I’d try this again, too. Nice tastes with apricot and pecan—add full measure of white chips. Nice loaf cake.
4/11 Lemon Candied Yams (Meals, Music & Muses) I need to try this again. Put too much lemon in for half a recipe. Good method in oven though.
4/2 Spinach and Hot Ham Bake (RR 30 Min Meals) Halved—too dry! But should have been good. Double sauce. Made with baked ham. [Made a quick white sauce for leftovers and much better!]
Slow Cooker Tacos Al Pastor leitesculinaria.com/311598/recipes-slow-cooker-tacos-al-pastor.html We loved this! I started it in my Instant Pot on the slow cooker setting, but after checking it after 6 hours the pork was not where near done. Then I remembered that this also happened the last time I used the slow cooker setting on my IP. I switched it to pressure cooking to finish the pork. We loved the pineapple-avocado salsa. This takes a little bit of time to prep everything, but so worth it.
OH my gosh!! I love you!@!@@! SO thrilled to get these lists. Such fun. I am trying to work up my own list. It's WORK, isn't it? I mean, I want to get the recipes typed up in case anybody would want them and that's the part that's hard. My husband uses King Arthur's Whole Wheat Cookbook a bunch. And Alton's. And Bittman's. My daughter made some kind of sugar cookie/peanut butter cookie that is probably one of the most addictive and good cookies I've ever eaten. Gotta get more info from her. Anyway, more soon, I hope. MY GOAL IN LIFE IS TO PARTICIPATE IN THIS MONTHLY THREAD!@!@ Seriously. Thank you to all who share. This effort on your part THRILLS some of us to PIECES!!!
