Make Again
2/22 (Vegan) Chewy Vanilla Spice Cookies with Chocolate Chunks (A New Way to Dinner) Very good! Did not use chile. Used vanilla sugar (did not grind up bean in it).
2/16 Lemon Cake with Raspberry Cream Cheese Frosting (MSL 6/20) Moist cake with good lemon flavor. Used dried strawberries instead of raspberries—such a great idea! Lovely shade of pink. Made 1/2 recipe of frosting.
2/14 Roasted Shrimp Cocktail (Ina Garten) So easy. Try hot?
2/14 Chocolatey Chocolate Cake with Chocolate Crumble (Simple Cake) I messed this up, but it was still good! I loved the crunchiness of the crumble. Lovely chocolate taste—used Droste.

2/27 Lamington Thumbprint Cookies (MSL 3/21) Used up many dribs and drabs: half a can of condensed milk, leftover once-melted semi-sweet chocolate, strained apricot jelly, some of the coconut. No sugar in recipe—just milk. Small cookies. Apricot/chocolate combo was good.
2/21 Ultimate Nachos (epicurious) Good formula—chicken needed to marinate longer. Bean dip was very good. Nice amount of cheese. Served with salsa, guac, chopped tomatoes, sour cream, green onions. Added some roasted peppers.
2/8 Coconut Cream Pie (CC) Only did custard, but crust sounds good. A little soft set, but tasty. Maybe a bit more coconut flavor needed? But if paired with crust… We are the people who don’t really like coconut cream pie

2/2 Chinese Beef and Broccoli Bowls (@thebitesizepantry) Just made sauce as stir-fry sauce—eh. Just the sum of its parts: soy, pineapple juice, sesame oil.

2/3 Single-Serving Chocolate & Peanut Butter Cookie (food52) Calling this a cookie is quite generous.

I stopped keeping track of my recipes (not that I ever really did!!) but I remember a few that stood out so here goes nothing:
These were all excellent:
-Pastel Azteca a.k.a Chicken Enchilada Casserole-Milk Street Kitchen March 2021-This was amazing!! Loved it! -Sheet Pan Curried Cauliflower and Salmon-Food Network -Chicken Gundi Soup-Sababa Cookbook -Vegetarian Harira-Sababa -Michael Solomonov's Hamantaschen-Food network with homemade Almond Poppy filling (Joy of Cooking) -Giardinera-Cook's Illustrated. Really like this homemade version and just made another batch -Whole Roasted Tahini Spiced Cauliflower with Garlic Chili Oil-Milk Street Kitchen. Used homemade tahini. -Yemenite Chicken Soup-Sababa -Jerusalem Bagels with "Israeli" Everything topping-Topping concoction was Sababa; bagels from "The Mediterranean Dish" blog -Millet Bagels-my adaptation of a Quinoa bagel recipe (from gatheredatmytable blog) -Sunflower Millet English Muffins-King Arthur Flour whole grain baking book but turned the bread recipe into muffins -Biscoff White Chocolate Blondies-Sally's Baking Addiction. Made for DH as I do not like either ingredients. He said good but on the sweeter side.

Wallycat-Homemade tahini was very easy. I just toasted 1 c. of sesame seeds on the stove. Then put in my vitamix with the kosher salt and started mixing slowly. Add hot water (I think it was around 2/3c.) and blitzed until creamy. Easy Peasy!!

Emma-I noticed that too. This had no oil and most others do have oil. I really did not miss it. Sesame seeds themselves have a high oil/fat content and bacause I used a vitamix and they became very creamy, I don't think the oil was needed. I also added the finished tahini to cooking applications where oil was added to the tahini in the recipe. I just used what was left of it today in a homemade salad dressing. It was so good but I made it up as I went along so no recipe. It was a creamy tahini mustard dressing with a bit of maple syrup to sweeten and offset the slight bitterness from the tahini. It worked! Sometimes I wish I would write these things down as I do them!! Karen

Thanks! I learned to keep a note pad and pen in the kitchen drawer, for those times you are inventing an epic recipe, or changing a recipe to your family's taste. I always thought I would remember, but. . . didn't. 😒

Parsnips and Apples with Marsala (https://cooking.nytimes.com/recipes/1020132-parsnips-and-apples-with-marsala) We loved this flavor combination. I served with a slow roasted pork roast. Cruncy Celery Salad with Lemon-Olive Oil Dressing (https://www.countryliving.com/food-drinks/recipes/a35854/crunchy-celery-salad-with-lemon-olive-oil-dressing/) Simple and delicious Leg of Lamb with Harissa Yogurt Crust (https://www.feastingathome.com/harissa-leg-of-lamb/) I used NY Shuk Harissa and Preserved Lemon Paste. The leftovers were great on Greekish salads. DIY Oyster Crackers (https://www.seriouseats.com/recipes/2012/11/diy-oyster-crackers-recipe.html) I know, I’m nuts, but these were super easy to make and delicious. I added black pepper to the dough, and instead of sprinkling them with salt after baking, I sprinkled them with salt before baking. Served with fish chowder. I’m glad that I made a double batch so we had some for snacking too. I cut some with a tiny round cutter, then switched to using a pizza cutter for speed and efficiency. Chef Anita Lo’s Pork, Shrimp, and Chive Dumplings (https://www.100pleats.com/recipes/dumplings) From an online class with Anita Lo. We made the wrapper dough, learned how to roll it out, made the filling, and cooked and ate the dumplings. I skipped the shrimp in the filling and scaled the filling recipe up to use the whole pound of ground pork. My dumpling wrapper rolling skills need practice! New Orleans Style Baramundi Fish Cakes with Creole Remoulade - food52.com/recipes/41531-new-orleans-style-barramundi-fish-cakes-with-creole-remoulade I used haddock. And after my oyster cracker success, I decided to make the saltines used in the fish cakes. They were a disaster as crackers (too think, not crispy), but tasted fine and worked as crumbs. Grapefruit-Poppy Seed loaf Cake with Yogurt Glaze (https://www.epicurious.com/recipes/food/views/grapefruit-poppy-seed-loaf-cake-with-yogurt-glaze). I added the pulp left on the juicer strainer to the batter. Baked in 3 mini loaf pans for 45 minutes. Did not make the yogurt glaze. The next time I made this, I think I will start with double the grapefruit juice and boil it to reduce it by half to increase the grapefruit flavor. Also want to try this with blood orange.
