For Christmas breakfast I'm thinking of doing something simple like toast and hot cocoa with marshmallows. To keep it simple I should probably just buy the marshmallows but I thought it might be fun to make them. Has anyone ever made marshmallows? There are a lot of recipes out there but wondering if any of you have a T&T. This recipe from Alton Brown sounds like a good one but I would probably cut it in half: www.foodnetwork.com/recipes/alton-brown/homemade-marshmallows-recipe-1953933. Or if you've made them and found them to be a PITA - let me know that as well .

I AODRE homemade marshmallows, but haven't made them for several years. I'm thinking that it would be a good pick-me-up for next week. They aren't at all difficult. The recipe I use is Toasted Coconut Marshmallow Squares, from Gourmet, December 2007. No worries if you don't like coconut, just sub the coconut extract with another extract. Use a knife dipped in hot water and dried off for each cut. I believe that I rolled each in powdered sugar after cutting. It's not as tedious as it sounds. Oh, and when the recipe says to make on a dry day, do that. They know what they're talking about... 😯

Thanks Chatnoir. I found the Gourmet recipe online and it’s quite similar to Alton’s. Glad to hear you’ve made them before and they’re fairly easy. And thanks for the tip about making them on a dry day - it’s gonna be rainy on and off the next couple of weeks so I’ll be sure to pick a sunny day.

I made the Alton Brown marshmallows and they were delish in hot cocoa this morning. I cut back a little bit on the amount of sugar in the cocoa but next time I would cut back even more because those marshmallows are sweet! They were surprisingly easy to make but a bit messy and mine certainly aren’t worthy of gifting but then that wasn’t the plan anyways. It took my sugar/corn syrup mixture a lot longer to come to 240 degrees which worried me but it all worked out. Now to figure out what to do with the leftover marshmallows - maybe Rice Krispy Treats or S’mores.
