I might make this Easy Moroccan Chickpea Stew recipe that I saw on YT. I just need a few ingredients --- will probably make a few subs, like using spinach etc.
Some of the ingredients include sweet potato, chili powder, sweet paprika, chickpeas, canned whole tomatoes, raisins, collard greens

Hi applecrisp, It is getting pretty quiet here these days. That chickpea stew looks similar to what I just made last week. It was an Ethiopian Chickpea stew or wot with a homemade berbere spice blend. Recipe was from Milk Street Kitchen magazine. It wasdelicious. I served it over steamed rice with some naan bread. I had some leftover chickpeas (made 1# dried) so I also made a braised chickpea stew flavored like one would make a Jewish braised brisket. It was also delcious. That recipe was one I morphed from a Smitten Kitchen and Molly Yeh recipe. Nice thing is they both freeze well so we had some for dinner and froze the rest for later.

Hello you two! It is quiet. But here we are.
I made Penne with Sausage and Eggplant Bolognese from Eating Well this week--it was really good. I thought it needed a bit more meat and a bit less eggplant, but there was no measure on the eggplant so that was probably just me being overly enthusiastic Also it took way longer than 7 minutes to get tender. And I dispute the name--it is really a pasta bake.
Headed to supper club here tonight (high 60s! so we can be on the patio) and I am making Broccoli and Ricotta Toasts with Hot Honey. It uses up the rest of the ricotta from the bake above and a head of broccoli that was languishing. Win-win!
On tap for later this week is Nepali-Style Chicken Curry with Basmati Rice--maybe! We still have some tomatoes, but they aren't the greatest for just eating so I thought this would be nice. Just FYI for anyone--the linked recipe is missing 1/2 c plain yogurt on the ingredient list.
And it is my birthday this weekend! I've got my eye on a Vanilla Caramel Latte Cake (maybe as cupcakes? I almost always bake my own cake!) and Caramel Pudding with Chex Streusel. Definitely making a pot of wedding soup for the family bonfire we're having. Was going to do heavy apps and drinks with friends, but now I am thinking Chinese takeout and that pudding We'll see!

It's going to be in the 90s today so I'm making a salad and Korean Scallion Pancakes from Milk Street. I just subscribed to Milk Street last week and have made two recipes - both of which were disappointing so I hope these pancakes are better. I'm trying to keep notes on what I've been cooking this month so I can participate Hits and Misses with you all.

McGee-I just started subscribing to Milk Street as well during the height of pandemic lockdown. Everything I have made from the magazine, cookbooks, and their website has been fabulous so I am sorry to hear you had flops. I hope the next thing you try is better. I bought their Fast and Slow instapot cookbook when Costco had it and it is much better than any other instant pot cookbook out there.

Karen, as usual your dinners sound great. I'll have to look up the braised chickpea recipe, that sounds so good and different too. erin -- Happy birthday! I've already made soup a few times. Tonight I made an old t&t from SmittenKitchens site ---- pure comfort food, super simple, and beyond budget friendly. It topped it with some parm. smittenkitchen.com/2017/10/quick-pasta-and-chickpeas-pasta-e-ceci/I'm running super low on groceries so no idea what I'll eat, other than hummus, apples and .... I so agree, it is super quiet here, don't know what will make people post etc. I use this for a distraction (and love reading what people are making, finding new recipes, and sharing etc), just need more activity. I'm with you, Applecrisp. I'm down to nothing much in the kitchen to eat. I've started the day with a Mott's Cinnamon Applesauce and my addiction: Wolfgang Puck's Hazelnut Coffee pod topped with whipped cream from a can. Luckily, I've got eggs and like scrambled eggs (made with milk, onions, tomatoes, little yellow chili peppers (1 or 2 from jar), or just plain (topped with Valbresco (?) feta cheese, if I have any on hand). My husband leaves town every month for a week, so I'm often on my own to figure out what to eat. I might order some groceries or might go myself. I haven't gone to grocery store for a long time. Before my husband left the other day, we made a FOUR LAYER CAKE from America's Test Kitchen. That's the only original thing (meaning: new to us) that we've made lately. The cake was from show...don't know if we'd recorded and if it's recent or not. (Gingerbread Layer Cake) We weren't impressed with the cake's taste--they went too far with the spices. We wondered if they just needed to come up with SOMETHING so they took a normal gingerbread and added everything they could find to it. (White pepper, cayenne pepper, fresh ginger, ground ginger, dried candied ginger, brewed coffee, cocoa powder, cinnamon, and on it goes.) The frosting they called ERMINE, was a white sauce, with sugar added, flour AND cornstarch, then 3 cubes of whipped butter!!! KILL ME NOW! [Editing to explain: husband really wanted to try this cake, after he watched the show -- in case, dear forum member, you are left wondering why the xxxx did we decide on this particular recipe if it looked so odd. I figured: a cake is a cake, how bad can it be? This wasn't bad...after it sat for a day, it did mellow out a little bit. But I'd never want to make or eat it again. Next time, I will select the cake. ]

It's in the 20's here today and snowing. It's too early for this... I'm currently debating if I want to make pumpkin scones or pumpkin bread and feeling a tich to lazy to do either. Catbatty - I've seen that episode of ATK and wondered about that cake. Good to know I should look elsewhere. Applecrisp - the chickpea stew sounds just yum! I'll have to flag it for another week as I just did my grocery shopping for the week. Thanks for posting. What's cooking? Last week was - lasagna (Cooks Illustrated), zucchini soup (Irish Pub cookbook), barely/black bean/corn burritos (Cooking Light Slow Cooker "cookbook"). Next week - brats (freezer reduction) and beans (Bush's - pantry reduction), tomato soup and grilled cheese (G. Hirsch Lifestyle), tastes like take out stir fried noodles (here).
