I love fajitas and greek food/flavors so when I saw a recipe for Greek Fajitas on amuse-your-bouche.com (its tagline, simple vegetarian recipes), I wanted to give this greek twist on fajita a try. I added it to last weeks menu plan. Thanks to mrswaz starting a thread about menu planning, just the nudge I needed to at least get a rough menu plan in the works. To give you an idea of the recipe.... grill up some veggies and then add some balsamic, greek seasoning, mix up an yogurt herb dressing with yogurt, garlic, parsley, lemon...., make your fajita and then top with some feta. In the instructions it said to add the balsamic dressing to the veggies (that she cooked over high heat), I changed up a bit since I thought that would boil/burn in hot pan. I've had a similar sandwich in a fav greek restaurant and they used to make something similar, but more of a tzatziki sauce and they added grilled chicken. I didn't follow the recipe that carefully, just grilled up some veggies, and basically followed the recipe for the yogurt dressing, and measure feta, are you joking. I did have some really good tasting flatbread/pita type bread that made it even better. I think some chicken would be a great add too.
