Interesting read - thanks for posting. It reminded me of something called Jell-o 123 that I loved as a child. It would separate into 3 layers and I just loved it.

I guess the history explains something about why gelatin was fancy schmancy at one point. My mom talked about it not being so easy in hte past. I remember both the 123 and the titled parfaits -- loved them both growing up. But I have never been a fan of the "salads" made with jello and mayo or cool whip.
