I think many of us could use some distraction, I know I sure can. So what's cooking? Eating? Anything on the list to try/make? Answer whatever you want....
For breakfast, the usual greek yogurt/fruit/and finally grabbed some homemade granola that has been in the freezer too long. Lunch, turkey sandwich for lunch (oh so that was whole wheat bread in the freezer).
I'm making a black bean soup tonight with lots of veggies .... need to use up some red peppers, have onions. I might make cornbread and freeze the leftover.
Tomorrow I'm making a favorite from the the old CLBB boards (KrisitB) --- Roast Chicken Breasts with Garbanzo Beans, Tomatoes, and Paprika
I haven't gone food shopping in probably 5+ days and no plans to go out in the next few days, so might be some creative (or beyond boring) meals. : )

I usually halve the chicken but make all the bean/tomato mixture (I think I sometimes upped the spice mixture and have just made the tomato/beans without the chicken). The smoked paprika/garlic gives it a great flavor.
Roast Chicken Breasts with Garbanzo Beans, Tomatoes, and Paprika (posted by KristiB/CLBB)
Use leftovers for sandwiches the next day: Place shredded chicken, garbanzos, and tomatoes in a pita bread and top with the yogurt sauce.
Prep: 15 minutes; Total: 35 minutes
1/4 cup extra-virgin olive oil 4 garlic cloves, pressed 1 tablespoon smoked paprika* 1 teaspoon ground cumin 1/2 teaspoon dried crushed red pepper 1/2 cup plain yogurt or Greek yogurt (I used Fage 2%) 4 chicken breast halves with bones(I also took the skin off) 1 15-ounce can garbanzo beans (chickpeas), drained 1 12-ounce container cherry tomatoes 1 cup chopped fresh cilantro, divided
Preheat oven to 450�. Mix first 5 ingredients in medium bowl. Pour 1 teaspoon spiced oil mixture into small bowl; whisk in yogurt and set aside for sauce. Place chicken on large rimmed baking sheet. Rub 2 tablespoons spiced oil mixture over chicken. Add beans, tomatoes, and 1/2 cup cilantro to remaining spiced oil mixture; toss to coat. Pour bean mixture around chicken. Sprinkle everything generously with salt and pepper.
Roast until chicken is cooked through, about 20 minutes. Sprinkle with 1/2 cup cilantro. Transfer chicken to plates. Spoon bean mixture over. Serve with yogurt sauce.
*Sometimes labeled Piment�n Dulce or Piment�n de La Vera Dulce; available at some supermarkets, at specialty foods stores, and from tienda.com.

Not shopping. Holding out as long as we can. Husband just made loaf of bread. He grew spinach so we've had Sauteed Spinach a coupla nights. Ate our bread dressing and fried eggs for about 3 nights, along with some homemade veg soup. Bacon and eggs a few nights. He eats oatmeal for breakfast, I do yogurt. He always peels a banana, cuts into pieces, and places it on my desk. (Adds blueberries if on hand.) THAT way, he gets fruit down me.  Lunch has been mostly hard boiled egg sandwiches. Might have to shop for more eggs soon. Safeway delivers and also has driveup service, but we haven't tried those methods of shopping yet. ZERO eating out or take outs or drive-throughs. It's been several weeks. We are really holing (sp?) up. We had to get some documents notarized yesterday. Wore surgical gloves and masks. We planned ahead. One of us would touch the papers and open doors with gloves on of course. Other one do nothing put present driver's licence and sign papers. The fellow working there wore gloves. Said he cannot GET masks.  He wiped are driver's licenses with Purell. We had only 2 feet maybe 3 between us and him. I am so worried now about that fella. Most of the clients we saw had no protection at all.

I've been doing pretty good eating from the freezer so far (pancakes, pierogies, sausage). I picked up a "spare" gallon of milk so I won't need to go to the store until next week probably. Also eating random things (popcorn, baked potato). I did make an oatmeal bake that was pretty good and adaptable. Leftovers today, but I plan on making some baked ribs tomorrow and chicken paprikash on Sunday. Maybe a new banana baked good or this favorite.
I did go to the butcher yesterday--local meat and eggs--and I stocked my freezer. I am trying not to go to the store, but I am starting to get worried that OH may implement shelter in place so it is a toss up. I am OK now, but maybe I should do a small stock-up run just in case next week is a turn for the worse. In reality, I could probably eat for weeks if I did not care about what I ate. I didn't buy extra TP though  My parents have not really been social distancing, although now most things are closed. My mom said if you go to the stores early enough, there are not many people there. Also, a bunch of stores are doing senior hour for the first hour or so of opening.

I'm waiting on my first-ever Instacart order which will probably not have much in it so I plan to head out to Walmart next Tuesday for the Senior hour one hour before store opening. Based on news and social media reports, I will need to be in line one hour before the senior opening time which means 6 a.m. If I get in, I hope to find dried beans, rice, canned foods, milk (the ultimate unicorn), cat litter, whatever. Bread and toilet paper will not happen. My new mode of life is "whatever I find" so here goes.

Breakfast will be 3 eggs, scrambled with diced bell pepper, a slice of chicken breast from last month's roast chicken, some steamed Brussels sprouts from dinner the other night, and leftover tortillas from a takeout lunch, warmed up and topped with Cotija cheese. I think it will be tasty and uses up rather than throwing out.

We have, I forgot, been using up old corn tortillas. Bit of shredded cheese on em, some sliced black olives and diced onions...nuked. Not too pathetic. Hubby makes them for breakfast sometimes. I get up later than he does, so I often find one made up in waiting for me in fridge.  Diced red bell pepper, yes. My husband puts them in everything because they are so healthy. SO, fearing we might not be able to get them (or want to go shop) I bought several jars of roasted ones. He was so pleased with me.  hehe HE ordered several bags of dehydrated onion from Amazon. (For his backpacking...but also in case we need. He makes pinto beans at home, dries them, pulverizes...and reconstitutes when out there on his own. Go figure.)

I've been in since Thursday and its been over a week since I went shopping. It's the fresh fruits and veggies that I'm out of (except for some celery, two clementines, lemons ...). I wanted to order some groceries from Peapod (like I often do) but they are all sold out for the next two weeks, or perhaps finally give Instacart a try. I probably will just go to WF mid week. It was a bit snowy and cold out today ---so nixed the idea of going shopping. Although I don't have some of my usual foods on hand --- just trying to be creative (and/or not bothered by some super plain meals). And getting rid of some of those odds and ends in the back of the freezer. Oh so that is what is in the foil packet and ....
Since being in I've made pasta sauce (why open a jar since I certainly have the time to chop some garlic etc, open a can of pureed tomatoes that has been in my cabinet for awhile), corn muffins (from a mix), hummus (wasn't that smooth and creamy, and missing something in the flavor department) but not bad and a great excuse to pull out some great bread from the freezer), veggie chili, sweet potato stuffed with a black bean mixture from the freezer, black bean quesadillas that I made and froze a few weeks back and ....
Today, PB on toast, tomato soup and bread (both from freezer), ice coffee (yeah to having milk!) and ....

I've been staying home now for well over a week with just one trip to store for groceries. DH is still working (Medical job so essential) so he picks up stuff if I need on his way home in evening when stores are less crowded. I have been craving and cooking more comfort foods which for me are soups and beans. Made Skinnytaste's Spinach bean and bacon soup as well as a creamy chicken vegetable tortellini alfredo soup (made this one up myself!) which turned out really good. Some went into freezer and some for my lunches. For dinner this week we finished some leftover black eyed peas and collard, then I made a pot of beans and greens ragu with some broccoli rabe that was on sale when I went shopping. I used large gigante beans. Had some extra gigantes so I am also going to make some saucy beans and artichokes (I think this was from Bon Appetit). Anyway....I also crave homemade bread so have bookmarked 2 new recipes to try soon....a quinoa bagel and a cheddar cheese bialy recipe. I also am expecting my first box of fruits and vegetables from misfits.com later this week. I've heard great things about them so this might be fun to play with and try new things while I am stuck at home. It looks like this is mainly on East coast now but if anyone is interested and in the right area, I have a discount code for the first box. Stay safe everyone.

I have a decent supply of food right now, and have made some kind of soup almost every day. doing a Costco run tomorrow in am early during the senior hour.
Soupnstew, around here if you get to the store before 9 it is pretty benign. I got to the QFC about 7:30 and it was pretty empty. most congestion is employees trying to re stock shelves. I did a more specific list than usual with food in order of aisles so I don't have to wander but can go in, get what I want, and get out. skipping the purse so I don't set it on a counter or in the cart. taking what I need in jacket pockets.

I'll let you know how the misfit box is Applecrisp....it is supposed to arrive tomorrow so may be it will give me a project to do and fill some time! I have started with the smaller size box to be delivered every 2 weeks, but if I like it I can change to weekly or get the larger size. You can also pause a delivery if you don't need anything at any time (or of course, cancel if you don't like it!). And I think after your first box, they are beginning to introduce the ability to customize as well as add some pantry items like beans, grains etc... I guess they have partnered up with Bob's Red Mill and others for that option so this might be a nice service right now. The price seems pretty reasonable. I will let you know what I think!

In January, I made a sourdough starter using einkorn flour and have been playing with sourdough since then. The good news is that when I started seeing Jovial einkorn flour at my local grocery store, I started buying it up to make sure that the store knew that it was a product that they should continue to stock. I have baked yeast bread in the past; this is my first time working with sourdough. I picked a good time to start a new cooking adventure. If I run out of einkorn flour, I have a reasonable amount of regular flour. Sourdough waffles are wonderful.
Of course now that runs to the grocery store are limited, I am craving greens. Normally, dinner at our house (me and DH) is some type of salad topped with a meat and a slice of toast or some grains. Instead of trying to do that 5 days a week, I am doing that more like 3 days a week. Last night I made a pot roast in the instant pot. It was a combination of a few recipes. The star ingredients were a bourbon barrel aged beer, bourbon, and onions. With mashed potatoes and carrots. That will feed us for a few days. That pot roast is one of the tastiest I've made. The beer came from a beer pairing dinner at a local microbrew. I bought three bottles for cooking with. Two more to look forward to! There are roasted chicken thighs in the fridge from the day before. We'll have those with salad tonight.
I made an instant pot pulled pork last weekend. Used some ginger beer that is not my favorite to drink as the liquid. I don't usually save the cooking broth or bone, but I had a quart of liquid left, so I saved it to use for cooking some dried beans. It is in the freezer for now.
Breakfasts for me are usually yogurt with granola and fruit. After visiting Iceland 2 years ago, I started making skyr in my instant pot. And granola. I'm due to make a new batch of yogurt in the next few days. My granola recipe uses olive oil and maple syrup, but I saw a post from FoodInJars about using jams in granola making so decided to try that with some of my older homemade jams. It is delicious. I like making jam a lot, but I always have more than we can eat. And I tend to make flavors that DH doesn't love. So now I have a good way to use up more of my jams.
I'm really wanting a roasted chicken, but haven't been able to get a chicken or any chicken parts. My freezer supply of chicken is pretty low. When I can finally get a chicken it is going to be a treat.
I have a lot of soup in the freezer, so I haven't made soup yet. It is nice to be able to pull a quart out of the freezer.
I'm feeling very thankful that I know how to cook, how to improvise with what I have on hand or can get, and also that we like so many foods that are not on the radar of most people so I am able to get them. I'm thinking about running out things like sesame oil and fish sauce, which are staples in our homes, but not in many homes.
NH's governor has not issued a shelter in place order. But we are essentially doing that. In the pre-Corvid 19 days, part of my routine was to meet a friend on Mondays and Wednesdays to walk on a local rail trail, and then do yoga with her on Fridays. Instead of yoga at one of our houses, we are now walking of Fridays too.

PattiA, like you I am more worried about running out of soy sauce or miso than peanut butter. Monday I combined a quick outing to a virtually empty Asian supermarket for various dried noodles and mushrooms, with a a swing through the prepared food area for mackerel sashimi and seaweed salad for lunch.
Tomorrow is leftover corned beef that I made in my Instant Pot, plus steamed cabbage wedges.

Applecrisp-Got my misfits box yesterday. VERY nice and definitely worth it esp. in these difficult times. I'll try to remember everything I got (I ordered their smaller box): 2 honey mangoes, several oranges and apples, a few onions, green beans, 3 nice zucchini, a nice head of romaine, and a bunch of collard greens, a bag of fingerling potatoes, a couple turnips and beets, and a persian cucumber. I think that was it. I have devised a plan for the next 2 weeks until my next box to use the produce. The only thing I didn't like from the box is beets but DD wants roasted beet hummus so I will give that a shot. I may try some beet chips and/or a pink pickled turnip recipe from Cook's illustrated. Other things on the menu: Roasted tilapia from freezer with tomatoes and fingerling potatoes (Food Network recipe), a seasonal vegetable soup with the collards and whatever veggies I have left lingering after a week from Cookie and kate blog. I'm going to add beans and quinoa to make the soup a heartier meal time soup; roasting some of the zucchini to top Saturday night homemade pizza this weekend. That's the latest plan but subject to change!!!!! All the produce looked decent too....not like seconds or if there were imperfections....very minor. I used some of the lettuce for salad tonight and had an apple (very good) last night. I think it might have been a yellow russet apple....crisp and sweet/tangy. Stay safe.

KarenW --- Thanks so much for the review. I definitely give them a try -- do you have the coupon code handy still? I'm with you --- I liked everything you got in the box (or would be interested in trying if new) other than the beets. Thx so much for giving such a detailed review.
Erin -- The fries and veggies cancel each other out!
PattiA -- fresh fruit/veggies is what I'm missing most too. I went grocery shopping yesterday and love having some fruits and veggies on hand. I have a big jar of oats and I was thinking of making some granola since I have just a little left in the freezer. If you have your go to recipe handy I would love to see it (or the source). Your meals sound delicious. One thing that is "funny" is that I smell so much more cooking on my floor of my apartment bidg now.
Soupandstew -- I grabbed the last jar of tahini at WF. I wouldn't think that would be so low.

I've baked 2 loaves of bread so far. DH is finally getting his fill, LOL. Night before last, I made tuna steaks with spinach and potatoes. Last night I made vegetarian nachos. Tonight I am making a one pan dish in the oven: basmati rice, layered with broccoli and topped with chicken thighs. I marinated the thighs using mostly the CLBB asian chicken thigh recipe and added a whopping TBS of thai curry paste. That should be HOT! I'm sure there will be leftovers for tomorrow. Then I will try to make tofu kung pao (using ATKs recipe, but they used chicken).
Maybe a frozen pizza will get thrown in there somewhere this weekend.

applecrisp1 , I posted my granola recipe with notes on how to use jam as the sweetener. I made pizza last night. Some topping inspiration from the pantry was a jar of roasted piquillo pepper, hot banana peppers, and capers. Roasted red onion is my favorite pizza topping and I'm glad I have a good supply of onions. It is nice out here and we have a partially full propane tank for the grill so burgers are on the menu for tonight. I'm guilty of not checking if I have something on hand before I shop. Perhaps an upside of the quarantine will be working on breaking that habit. I have 6 bottles of rice vinegar! Granted I use a lot of it, but I don't need to stock 6 bottles.

The sewer backed up into my basement in the heavy rains last night. So I made pancakes for breakfast this morning. It used up my buttermilk and the open sour cream. I was annoyed with this recipe and said never again, too fussy, the batter is so thick the pancakes don't spread, the apples don't want to scatter from the tbsp. Etc. But of course they were REALLY good. So here it is!
Apple Cinnamon Pancakes (Cook's Country Apr/May 2017) 2 c (10oz) flour 2 tbsp granulated sugar 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 2 c buttermilk 2 eggs 1/4 c sour cream 3 tbsp butter, melted 2 apples, peeled, cored, and chopped fine 1 tbsp brown sugar 1/2 tsp cinnamon vegetable oil
Whisk dry. Combine wet. Make a well in the dry and pour in wet. Gently stir until just combined (batter should be lumpy). Do not overmix. Let sit for 10 minutes. Prepare apples and mix with brown sugar and cinnamon. Cook in pan with oil. Portion out using 1/4 c measure. Cook until edges are set, first side is golden, and sprinkle with 1 tbsp apple mixture. Flip and continue cooking until done.

I made some Green Tomato Potato Curry, recipe saved from CLBB, and mixed up my own version of Garam Masala (green tomatoes frozen from last years tomato plants), chicken stir fry, ravioli with vegetables and a garlic olive oil topping...who knows what I’ll decide on today...

Had one of my usual go to breakfasts -- greek yogurt, grapes, and granola (from the freezer). Since I have time, maybe tomorrow I'll toast an english muffin to shake things up. Lunch --- sipping ice coffee, haven't gotten to that yet. But probably the so exciting turkey sandwich with avocado. Dinner --- I might make this (with some tweaks/using what I have). Applecrisp-those burritos look good. Copying them for a later date. I like Molly's recipes. Same here. I've tried a bunch of her recipes and they were all really good. I checked out here cookbook a few times, and her story was really interesting. Plus she he seems real nice too! One of the few shows on the FN that I sometimes watch. I have no interest in some shows that they put on endlessly (they should change the channel name to Guy Fieri, plus lots of nonsense, and a few shows of actual cooking tossed in). I digress.. Dinner tonight .... chili from the freezer, stuffed in a sweet potato, with some melted cheddar. Salad ... trying to make those fresh veggies stretch.

I recently unpacked my binders of recipes, a lot from the old CLBB, and have been going through them for meal ideas.. I bought a package of frozen cauliflower gnocchi from TJ's in January, and when I came across this recipe I remembered that I had them. Potato Gnocchi with Spinach and Yellow Squash www.myrecipes.com/recipe/potato-gnocchi-with-spinach-yellow-squash#add-your-reviewsI had a zucchini which needed to be used, but only a few ounces of spinach, so I made some substitutions and it was quite good. I kept the recipe as written (4 servings) for the 2 of us, using the 2.5 serving pouch of gnocchi. Gave me lots of veggies and sauce (DH had throat cancer a couple of years ago and the radiation zapped a lot of his salivary glands, so he needs very moist, "saucy", meals). Alterations: used a zucchini instead of yellow squash, added chopped roasted red peppers and sliced onion, used only 5 ounces of spinach, decreased the smoked gouda a bit, added smoked paprika and crushed red pepper flakes. And used 2% milk. Definitely worth buying those cauliflower gnocchi again, when we can go to the stores... 😑

I made some bread from Artisan Bread in 5 Minutes a Day and a pot of Chicken Potpie Soup...along with a Banana Chocolate Chip Bundt Cake...

My favorite recipe for hamburger/sandwich buns is from King Arthur flour. I think those Better Burger Buns are the same recipe. They were called "Moomie's Buns" originally and are delicious. Sometimes I make them dinner roll size. I have also used 1/3rd ww flour with success and top with everything seasoning for another variation.
