Last night I cooked a few trays of eggplant parmesan for Tuesday and Wednesday. It is a time consuming process to make the sauce, batter and fry the eggplant, assemble and bake for 40 minutes. I won't have time to do it over the next couple days so I went ahead and cooked it. My questions are, do you think that's like serving leftovers, is it safe to serve something three days old, and do you think it will lose some "freshness" after it's rebaked? I'm new to the forum 🥂. Thanks for any help!

Welcome to our forum, Thirsty!  I think, as long as you wrap them well, everything will be fine! Sounds to me like you are finishing the dish in time. That's just my opinion. I have a baking cookbook designed for working folks and it's premise is similar to what you have done, prep some each day and finally finish and eat. Will it stay crisp? I think baking will straighten that all out at the end, right? I'll be interested to see what others say. Maybe you should bake them alone a short time just before you add the sauce...to crisp them up after their rest? Anyway, glad to have you join us!!
