I love peanut butter and the natural is the only one that tastes good. I use the inversion method to start. gets process started. I sometimes roll the jar on its side. the climate here is cool so I don't get it mixing very well without stirring it, even inverted for days. I use a knife to stir after opening by plunging up and down. once mixed, it will stay mixed when refrigerated. I love crunchy texture so I would not use blender or immersion method. its still a PITA but I love PB so its worth it. my favorite by far is Adams.

traildoggie --- I've never tried turning the jar over etc. My method is to stir with a knife and hope the oil doesn't go all over (and I buy TJ's Valencia PB so just PB and salt). If I can make it easier, that would be great. Maybe I need to finish that last of the PB, I have a jar in my cabinet just waiting .... I've never tried Adams PB -- thanks for the suggestion.

After the fiasco I had with tahini and immersion blender, I won't try it again. I use the knife method/spoon method. I've tried the upside down but it isn't any better for me.

room temp PB is not too hard to mix. Tahini IMO is MUCH worse. don't even make me think about that. tahini and an immersion blender??? too awful to contemplate..... those layers do not want to blend. Adams is available most places, just peanuts and salt. Love it.
almond butter is in between PB and tahini but I do the inversion thing for a few days if possible and then plunge up and down with a table knife. sometimes the bottom corners don't want to stir in, and its easy to splash some oil. If the layers want to stay separated, I put on its side, and wait for a bubble of oil to form there, and then invert. maybe in warmer climates PB will mix by itself, but not here.

I bought Costco PB, which is a BIG jar. Never again. 16 oz. Trader Joes and it is super easy to use knife/spoon. I have had them flipped upside down a few years back, but didn't get any different result. TJs tastes wonderful and is the cheapest I've found. Target doesn't ship smooth, and that is my preference.

I'm on same page as Wallycat....I've tried turning the jar upside down and it never has worked for me so I stick with the take a knife and stir routine.

I bought the Costco( Kirkland) p. butter once but like adams brand much better. I get the big jug of adams crunchy at Costco and invert, roll on side etc for several days before finally doing the table knife/plunger method. I go one step further and transfer some to a smaller jar because that big one takes up too much room in my kitchen refrigerator. we have an old frig in the garage for big things. its not perfect but I can usually mix it pretty well without getting oil all over.
